The problem is that big cats are powerful enough to seriously hurt you just from playing. Even domestic cats can hurt you if they are not taught to play with sheathed claws and not bite. We have thinner, more fragile skin, and they don't instantly understand that we can be hurt easily by them through play.
This wasn’t a hunting instinct. This was them playing. Their mouths would’ve shown to be more aggressive and open. This was definitely a more playful attack. Hence to why they acted fine when he turned around. They’d still be trying to get him if it was an attack aggressively.

It looks to me like their stalking is mostly playful. They know he's not food, but the hunting instinct is triggered when he turns his back, so they want to go for him. I suspect that if they really tried to catch him, they would be a lot more forceful (and also try to be sneakier). Still, it's a powerful display and a good reminder that big cats don't make good pets.

Also, the neighbouring farm has a guard-dog which is set loose time to time to piss off strangers. It ads up and I had a chance of experiencing "blunt quick look around" after 20 minutes of concentrated work in a environment that is surrounded with MOVING NATURAL GREEN COLOUR.
Out in the wilds they would hide in tall grass and their camouflage might do the trick but on a flat surface their instincts don't do them a favor. Housecats got the same instinct, you don't have to take a risk beeing mauled by them though.
