  • Malagkit pero hindi kakanin? Try this #simpol Ilonggo-style ARROZ VALENCIANA recipe na bagay na bagay sa inyong hapag this holiday season! Festive na festive, kaya luto na!
    Ingredients:
    3 cups - Glutinous Rice
    4 cups - Chicken stock
    1 tbsp - Turmeric powder
    1 pc - Red onion
    4 cloves - Garlic
    250 g - Chicken thigh fillet
    150 g - Chicken liver
    3 pcs - Chinese chorizo
    8-10 pcs - Shrimp
    1 pc - Red bell peppers
    1 pc - Green bell peppers
    1 tbsp - Paprika
    1 tsp - Cayenne peppers
    ½ cup - Raisins
    ½ cup - Green peas
    ½ cup - Chicken stock
    Patis & black pepper to taste
    Hard-boiled eggs

    Nakakahiya ang ibang kapwa ko Ilonggo dito. Mga mapanglait. Alam naman po natin na sa bawat household may kanya-kanyang version ng luto yan. So matuto kayo rumespeto. Arroz Valenciana is a staple dish sa Iloilo in every occasion, iba din ng version ng tatay ko pag siya nagluto. Meron nga dito nabasa ko na gumagamit pa ng orange soda, which is not a traditional method. Dapat nga matuwa pa tayo na na feature dito ang dish natin, nagkaroon tayo ng representation.

      Tama. Nabasa ko dn ung mga nega comments. Same ky mama, iba dn ang way of coocking nya. Parang adobo lng dn yan, may mga versions. Hnd porket sinabi na "ilonggo" taga iloilo lng. Dpat maging wider ang pag appreciate ng iba sa mga ganyang bagay

    Tagalogin ko ba ang comment ko. Kung gusto nyo, ilocano, kapangpangan, pangalatok at French! Pero ipatranslate ko muna. Doon sa mga basher, manood lng kayo! Kung may mali man sa ginawa nya, wag kayong manlait. Bakit pecto ba kayo?

    Mas malasa po ang valenciana kung nakakabad na ang bigas na malagkit bago igisa..more or less 3hrs na babad. Pwede rin overnight ilagay lang sa ref para lasang lasa ang turmeric..mas masarap po pagmay chorezo bilbao. Pwede po yan direct cook para manuot ang lasa ng sangkap sa bigas..

    From Spain here. Please don't call this arroz a la valenciana. We don't put chorizo, hígado and eggs. I think that's hígado (liver). The only meat is chicken and rabbit.

    i did not like this dish, but when I got married to someone from
    there…part of the union got to taste it more often and voila, masarap siya. lalo na if your love ones makes an extra effort sumasarap lalo.

    Thanks very much for this beloved recipe, chef! I was in Grade 2 when I tasted this delicious dish for the first time, when we celebrated my first communion. Hindi ko nakalimutan ang lasa - and I am sure your version is the nearest to that one I had many years ago, esp.bcoz of the sweet raisins which contrasted with the saltiness of the other ingredients.       Akala nila madali ang maging cook. Sibuyas pa lng, iiyak ka na. Paghanda pa lng ang hirap na. Kung walang taga slice nang mga sahog, aabutin ang cook nang dose dose. Syam syam na lng. Tapos ang cook pa go market. Unfair na yan. Sobrasobra.

    We call this Biringe in pampanga, I mix chicken stocks and gata to cook the malagkit with turmeric add pepper to enhance the curcumin of the turmeric. Good job chef Merry Christmas to everyone.

      Yes, almost very similar in cooking method, the only difference is bringhe dont use tomato sauce/paste, it is rich because of coconut milk and coconut cream and bringhe is prone to mishaps that can easily turn the malagkit either malabsak (biko texture) or undeercooked if the rice-liquid ratio is off

    Bringhi yan sa kapampanga n, po . At palagi ako naglulut nyan lalo na sa pasko at new year ❤ 🎉🎉🎉tradition nang kapampangan yan kapag may handaan binabalot namin yan sa banana leaves hnd pd mawala yan sa lamesa. Yan lang habol ko kapag nakikibisita ako ang bringhi 😂lalo na ang tutong nya yummyn😂 fyi may kanya kanya version yan san ka masaya doon ka ganon lang yonn.!talke note tip binabaligtad ko yan magkabila na may tutong para tutong sa taas tutong sa ilalim yum kapag walang tutong hnd sya bringhi yan sa kapampangan delicasy 🎉🎉🎉

    Idk the authentic way but my mum always made valenciana every holidays. Mum is from negros and this is her specialty. I didnt grow up there but for some reason I ate this like a lot. Especially pag yung may pasas na part.

    Almost the same sa Bringhe naming mga Capampangan. The only difference is that we use glutinous rice and gata. Nakakatuwa na madaming pagkakapareho ang mga Ilonggi and Capampangan.

      You are trying to get the flavor of the banana leaves at the same time trying to protect the rice from burning. .double purpose..
