4 cups - Chicken stock
1 tbsp - Turmeric powder
1 pc - Red onion
4 cloves - Garlic

8-10 pcs - Shrimp
1 pc - Red bell peppers
1 pc - Green bell peppers
1 tbsp - Paprika
1 tsp - Cayenne peppers
½ cup - Raisins
½ cup - Green peas
½ cup - Chicken stock
Patis & black pepper to taste
Hard-boiled eggs

Nakakahiya ang ibang kapwa ko Ilonggo dito. Mga mapanglait. Alam naman po natin na sa bawat household may kanya-kanyang version ng luto yan. So matuto kayo rumespeto. Arroz Valenciana is a staple dish sa Iloilo in every occasion, iba din ng version ng tatay ko pag siya nagluto. Meron nga dito nabasa ko na gumagamit pa ng orange soda, which is not a traditional method. Dapat nga matuwa pa tayo na na feature dito ang dish natin, nagkaroon tayo ng representation.

Mas malasa po ang valenciana kung nakakabad na ang bigas na malagkit bago igisa..more or less 3hrs na babad. Pwede rin overnight ilagay lang sa ref para lasang lasa ang turmeric..mas masarap po pagmay chorezo bilbao. Pwede po yan direct cook para manuot ang lasa ng sangkap sa bigas..

From Spain here. Please don't call this arroz a la valenciana. We don't put chorizo, hígado and eggs. I think that's hígado (liver). The only meat is chicken and rabbit.

Thanks very much for this beloved recipe, chef! I was in Grade 2 when I tasted this delicious dish for the first time, when we celebrated my first communion. Hindi ko nakalimutan ang lasa - and I am sure your version is the nearest to that one I had many years ago, esp.bcoz of the sweet raisins which contrasted with the saltiness of the other ingredients. We call this Biringe in pampanga, I mix chicken stocks and gata to cook the malagkit with turmeric add pepper to enhance the curcumin of the turmeric. Good job chef Merry Christmas to everyone.
Yes, almost very similar in cooking method, the only difference is bringhe dont use tomato sauce/paste, it is rich because of coconut milk and coconut cream and bringhe is prone to mishaps that can easily turn the malagkit either malabsak (biko texture) or undeercooked if the rice-liquid ratio is off

A staple at every Ilonggo fiesta, I reckon a Spanish priest from Valencia, Spain must have introduced that to Ilonggos.

Idk the authentic way but my mum always made valenciana every holidays. Mum is from negros and this is her specialty. I didnt grow up there but for some reason I ate this like a lot. Especially pag yung may pasas na part.

Almost the same sa Bringhe naming mga Capampangan. The only difference is that we use glutinous rice and gata. Nakakatuwa na madaming pagkakapareho ang mga Ilonggi and Capampangan.
