    It's good to know how filipino makes Arroz Valenciana from one region to another. Nanay cooks the glutinous rice with water just like making regular rice except. either in regular pot or the modern rice cooker with turmeric or we call calawag powder.She does not use coconut milk. The meat is sauteed with garlic and onion, using all the ingredients similar to your biringhe, With less manipulation , mixing or stirring she adds the cooked glutinous rice with the meat and cover with banana leaves on top. The result is the same .The flavor ,aroma and taste is delectable with less arm wrestling . Remember cooking and art should be fun and less stress .I'd been cooking it the same way like she used too using Chinese sausage and minced scallion as topping.

    It is not right for you to say "wala ni sa amoa." We cook Valenciana and Paella in the visayas. We also use coconut milk to give it a twist. Remember, there are a lot of Spanish people in the Visayas and we used to cooking Spanish dishes. My mom is Spanish and we are used to eating spanish dishes at home. Daghan ug mga Kastila intawon sa Negros dong. Taga asa man diay ka?

      Yes mam. “Wala ni sa amo-a”, I’m referring to my clan - my family in Cebu. This type of recipe was not and was never cooked by my grandparents. And most of the household I visit for any occasions in Cebu, this type of dish or at least similar was not cooked as well. My lineage is also Spanish, hence my family name, but unfortunately, none of my family members or my ancestors have passed down this type of dish to us, maskin amo silingan ug circle of friends… that’s my basis when I said “wala ni sa amo-a”.
