If I’m reading this correctly, you use self rising flour AND salt and baking powder? That seems like a duplication!

Did you make your own fondant icing?
+Curtis p Martha used a block of icing and mixed with water (instructions are in the recipe link below the video) but you could make your own!

I think 30 mins is too long. It makes the sponge dark and not like the fluffy ones sold in the shops. 26 mins worked perfectly for me and we got a nice light sponge

That's a new one on me too. I'd give it a try.
Why would you bother when store bought ones are so cheap and utterly delish. Also marzipan? On french fancies? I think not
Dear Martha you should really tie your hair tied back when baking even though my hair is short I wear a hat when cooking or baking,, lovely recipe for French fancies
