The key to soufflé is to whip the meringue to the right dry foam and keep the temperature. Preheat the pan to 175 degrees in advance and control it between 170-175 degrees. Squeeze the batter into the pan, cover it with a lid, and fry it on each side for about 4 minutes. It will basically not collapse and will not become a pancake. 請先小火把鍋加入到170度左右,也就是把鍋燒熱到撒點水就吱吱的干了,就可以下麵糊了,之後一直保持最小火,如果火候只是在中心,請時不時移動一下鍋,可以讓蛋糕均勻的受熱。

想問一下,為什麼我的面糊放如擠花袋裡面擠出來是流體狀的而不是棉棉的擠出來又高高的,而且我的蛋清也很棉
我的比例也是照著這部影片做的,但做了兩次還是一樣
蛋白沒打發成功,可能的原因是:
1.打蛋時混入了少許蛋黃或雞蛋不夠新鮮
2.洗了打蛋器沒擦乾水份(無油無水)
3.打蛋器的功率不夠
拯救步驟:
1.放入冰箱冷藏15分鐘(讓蛋白狀態更好)
2.加入幾滴白醋(檸檬汁)繼續用打蛋器打發(也可以加入1/2茶匙泡打粉或玉米澱粉,增加成功率)
3.打到有一點小尖尖時加入些許白糖繼續打發
4.直至提起打蛋器,出現火把狀的小夾頭,這時,蛋清打發已完成,合格的蛋白打發好後,呈固態,很粘稠,即使翻過來也不會掉。

火太大了,需要將溫度控制在175度左右。
你應該是家裡的爐台(天然氣),最小火只能集中在中心區域,無法讓鍋子受熱均勻,導致溫度上升太快,所以糊了。
解決方法就是需要偶爾移動鍋底,使其均勻的受熱,保持適合的溫度。

應該是蛋糕還沒完全熟透,蒸氣迅速逸出,導致蛋糕失去了內部的支撐,從而塌陷。
下次可以增加多一點時間延遲打開蓋子。

我的蛋白都很難發
這麼好
打發要注意這幾點(可能有點囉嗦)
1.容器要無水無油,蛋白裡盡量避免有蛋黃,選擇新鮮雞蛋,油脂和水分會影響打發
2.蛋白一定要冷藏以及添加玉米澱粉(可選,一般是1茶匙即可)、糖、檸檬汁、白醋可以提高穩定性,幫助打發
3.新手不建議用高速,我試過特別容易打發不均勻,而且不容易掌握狀態
4.打蛋器功率不夠,打發耗時過長,蛋白反覆摩擦溫度升高,容易不穩定導致消泡(超過6分鐘都沒打發起來,就是功率太低了)

我開蓋的時候會塌掉
有什麼要注意的地方嗎
這個原因有很多的可能性,可能是溫度,時間,火力等都有可能導致這樣的情況出現
要注意的點是:
1.煎好後盡量在肉眼可見定型後再嘗試開蓋(或者是根據我給的時間增加多1-2分鐘),過早開蓋會讓內部過度膨脹而導致塌陷。
2.火力過大,舒芙蕾底部過快凝固,而內部仍未充分膨脹,容易導致塌陷。 控制好火力(最小火,如果是鍋底受熱不均勻,就移動一下位置),保持適度的溫度,讓煎餅均勻受熱。
3.舒芙蕾的大小:煎餅的大小也會影響翻轉和穩定性。 如果煎餅過大,例如直徑過寬,自身重量會導致煎餅塌掉的可能性增加。 盡量控制煎餅的大小,使其易於翻轉和保持形狀。
4.麵糊太稠,煎餅在烹調過程中無法充分膨脹,容易塌掉。

非常抱歉這個影片的配方讓您不滿意,但是配方我自己親自做過的不止一次沒有一次是失敗的,關於雞蛋和麵糊這個比例,可能是有些雞蛋比較小導致這個量的麵粉會讓麵糊有點稠 ,你可以增加一點牛奶去調節,狀態以濃稠可以滴落,沒有顆粒狀態為準,但不是要稀!

沒有一家的麵粉可以絕對相同!很多事情都是手感達人😊,才是真功夫。正確的比例都是自己精細整出來的。
