      I use gamakatsu size 1. Octopus hook. Not circle. But I have used other hooks. The key is small and short Shank. Avoid light wire hooks because the mullet will bend them out. I have found the smaller hooks sneak into their delicate mouths better.

    • @mgsfishing

      There isn't a wrong way. But I like it spicey so I use salt, black pepper and cayenne pepper. Go easy on the cayenne. Butterfly the fish open, clean out stomach cavity very good. Lay scales side down on smoker on aluminium foil. Keep heat 200 to 250 and smoke until desired doneness. I like the meat to flake with fork

      @@leewood509 He is right! The best smoked mullet I ever had was at a restaurant and the owner was nice enough to tell he his secret! One part black pepper to one part Lowrys Seasoned Salt, though I'm sure most good quality seasoned salt would work just fine. Coat the fish in this as you would with flour as if you were going to fry it. And if you like it more spicy, add as much or as little, if any, cayenne pepper as you'd like, just like @mgfishing said. I hope that this helps.

    • @jimjordan5630
      @jimjordan5630 3 місяці тому

      Respectfully, they are fish and do have bones. Probably more than catfish, but I wouldn't refer to them as a boney fish. I and my siblings were eating mullet without a parents help to detect the bones as long as I can remember. The trick to mullet is practice. The best tip I could give as a long time mullet eater, and 99% of my mullet is fried but smoked is great also!, is that there are small bones around the top of the fish along with dorsal fins, and that besides the dorsal fin bones themselves. Then near the skin along the midline of the mullet there are the pin bones. If you fillet the fish then most of the bones will be taken care of and you can then trim out the pin bones. I find that to be a waste of time and meat and prefer to just fry my mullet and deal with the bones as I eat the fish. I hope that this helps. Oh! And one more thing! If you do fillet the mullet retain the spine! You can season and coat them as you would your fillets and cook them first! It's a great way to check on your oil temp to get it just right for frying and there is enough meat left on it that along with the seasoned coating it makes a great appetizer and something to snack on while the fillets are cooking! It also keeps "the nibblers" away from the fillets and the nibbles won't eat so many fillets when you do sit down to eat! lol

      Salt pork is typically pig's belly in the grocery store. Fatback is a slab of salted pure fat from the back of the pig.

    • @jimjordan5630
      @jimjordan5630 3 місяці тому

      Two different pieces of meat/fat. The fat back is the layer of skin and solid fat from the back of a hog. Salt pork, and bacon, comes from the sides and belly of the hog and has meat. In some markets salt pork is also call "streak-a-lean", "streak-o-lean" or "streak of lean" referring to the streak of lean meat in with the fat. The "thick layer" that he referred to in the video is the actually the skin and not fat. You can also fish with strips of just the skin for other fish. They sell in at bait shops and in sporting goods and tackle shops in small jars called, ironically, "pork rinds". It's also sold in the same style jars with a notch cut into the "tail" of the rind and it resembles a flat frog.
