- Another Japanese Chef's knife! This shape is inspired by the DEBA knife's typical Japanese-style Chef's knife and a general utility bevel geometry.
The steel is 440 C Stainless Steel. The handle is made of zelkova wood and copper, polycarbonate.
How much Rockwell this blade?

WOW I am still interested in how you bypass all those sanding strips with your multitool? If possible could you tell me exactly what you use? I would love to find an easier faster way to remove those scratch marks without a million pieces of sandpaper. Another great build!!
Oilstone and molded air-leaping straight-line grinder...And put oilstone on the multi-tool.

You are doing nothing . Just gave the shape to the blade with modern equipment. It's not forging. Do forge with hammer and anvil. Then it will be interesting.
Steel forging is not the only correct answer...There are a lot of good refined ingredients, and the strength is very good...Don't insist on steel forging.And I don't have the environment to steel-tight environment. My neighbor lives close by.
