1:37 are you supposed to disconnect the cables?

No, you just need to keep the wires hanging there as default, and use screws to assemble the hopper to the grill body first.

I just Purchased Z Grills 7002C what is the difference between that and the Z Grills 7002f?

Functionality wise, all pellet grills are very much alike. But for 7002F2 model, it has a stainless-steel lid and that's the only difference with 7002C.
