I’d already had the cook’s perk of licking the spatula after I’d made the curd (that is definitely a recipe I’ll make on it’s own to spread on keto bread!) and I couldn’t wait and had to try a portion before I put them in the fridge. The 1g of zanthum gum was too much for my recipe. It made my curd thicken up. However, this recipe turned out absolutely DEEEELICIOUS! It is amazing! Thank you💜

Not bad. This is the first keto dessert I wouldn’t mind eating, and I’ve made and experimented with a lot of keto recipes. I normally don’t like the cooling sensation of erythritol, but in this case it actually adds to the lemon bars. If I ever make this again I have to remember to give the shredded coconuts a chop. The ones I bought were pretty long so it kind of messed with the texture. The crust is a lot drier than a normal lemon bar, but the lemon curd part tastes great.
Thanks Keith! Glad you liked them, you can add more butter to your crust if you find it dry. And yes, shreddes coconut varies. You can buy medium, fine or even chips (like small chunks) and sometimes they still call it shredded. 😅

Hi, I made a Keto lemon curd using erythritol and after cooking and cooling the curd went grainy from the sweetener…it had crystallised will the same happen to this? I made it again using powered sweetener and it didn’t happen what do you recommend granulated or powered? I know you used granulated in the recipe I just don’t want to make it and have to bin it, if it happens again . Thank you
Hello, I sometimes use powdered and granulated erythritol whenever I’m making my lemon curd and it never crystallized. You can try allulose or xylitol but I never had problems with my lemon curd before with erythritol.

You can pop the mixture to your microwave to loosen it up a bit then you can pour it directly to your crust.❤️

Hello Maria, you can probably use cornstarch or xanthan gum to thicken the lemon curd but I’m not sure if it will hold up while slicing.❤️
