Excellent recipe! If you want to up the wow factor you can mash together fresh raspberries and chia seeds and let it sit until thickened. Then add that mixture on top of the lemon layer. Go even a step further and double the original crust recipe. Use half as a base layer as shown in the video and the other half as a crumble on top. Ultimately, it would be: almond base, lemon layer, raspberry/chia layer, almond crumble. Tasty! (But the macros would be different.)

Blue Diamond is the lumpiest almond flour I've ever used. I'm now using Great Value from Walmart, same macros as the big brands, but it's super, super fine and doesn't clump up.
That's very true. I usually buy my almond flour from Walmart, but this time I got Blue Diamond. I noticed it was very clumpy but didn't really put it together until I saw your comment.
Made these today. Only thing I did was baked for 30minutes instead of 25. Oh. My. Goodness. Hands down, best keto dessert! I topped it with some whipped cream and was floored. Definitely want to let this chill in fridge for a few hours. It wasn't as good still warm. Totally worth the wait! Just melts in your mouth. Usually keto treats have an overwhelming almond flavor from the almond flour and are really gritty. This isn't. I can imagine these even being delicious after freezing them a bit and again, topping with whipped cream. Shared with a couple friends and they adored it! Even my daughter loved it! If I may advise, allow the butter to sit in room temperature 4 hours before making the bars, so that the butter soften. I think it is butter than microwaving it.

So I cut myself a still warm piece, I didn't put the powdered sugar on it put I did add a little whipped cream and it's amazing! It actually tastes more like key lime pie. This is great! I made these yesterday and they taste incredible! The base is a little grainy and oily, but I just used ground almonds so that could be the issue. I'm going to try de-oiled extra fine almond flour instead. I also used substituted allulose 1:1 with the amount you recommended for confectioner's Swerve and it turned out great. They are slightly less sweet than you intended but now that I've been on keto a little while my sweet tooth has diminished and so I actually liked it a little less sweet and it really allowed the strong lemon flavour to shine

Although I did over-burn slightly (I have a gas oven), this is sooooo delicious! a tiny bit too sweet for my Japanese taste, but really yummy nonetheless. That's a lot of Erythritol which is in swerve as the sweetener. Serving Size: 5g (1 teaspoon) seems you used 25-28 teaspoons which would put each square around 15.5g of carbs. That's bound to cause a blood sugar spike.
Erythritol, although contains 3g of carbs per 3g serving, technically counts as zero net carbs as it’s a sugar alcohol that doesn’t fully get used by the body. Swerve even advertise that you don’t need to add I to your carb count.
I made these tonight, but I added the zest of 1 whole lemon and 1 whole lime, as I like my citrus desserts to be nice and strong. It was just a bit tart, with a nice texture. I tried another keto recipe some time back for lemon bars, and they were eggy, and had barely any lemon flavor. This recipe, however, is exactly what you need for keto lemon bars. Recommended.

I made these last night, they're pretty good, thought not sweet enough. My access to stevia sweeteners is extremely limited and things like monk fruit are unheard of, so I will need to adjust for next time. Anyway, this crust is really good and really easy but I think next time I will wait for the crust to cool and fill it with lemon curd, which is easy to make keto and doesn't require further baking. But I'm also thinking this crust can be filled with lots of things. Leave out the sugar and you've got a great chicken pot pie crust, for example. Thanks for the recipe, you put a lot of effort into this and it shows.

Did them this week but we sadly only had Erythritol as a sugar free sweetener in our stores. :/ The base tastes amazing and I will steal for a lot of other baking stuff I do. The lemon topping is ok but I think I need to find another sweetener.

1/2 tsp Vanilla extract
1 c Almond flour
3 tbs sweetener
Bake for 10 minutes at 350
3 eggs
3 juiced lemons
Zest 1/2 lemon
2/3 c sweetener
1 c almond flour
Bake for 20 min
Chill then sprinkle with sweetener

Did them this week but we sadly only had Erythritol as a sugar free sweetener in our stores. :/ The base tastes amazing and I will steal for a lot of other baking stuff I do. The lemon topping is ok but I think I need to find another sweetener.
