    I love this updated bougatsa recipe. Thank you! It's not a classic bougatsa recipe but using flour makes the filling so much smoother than semolina (gritty even with finely ground one). iKos resorts also use flour in their breakfast treat bougatsas, but these individual parcels makes the fillo crispier and easier to serve. It's fun to change the recipe a bit so I used chamomile flowers steeped in whole milk instead of the vanilla bean/rose water and drizzled greek honey on top.

    First it was rose water then it was orange blossom water. Which one is it please?

    No touch of salt, no honey syrup, boiling milk with a rushed attempt to temper the eggs, no semolina flour and no egg wash on the outside. What a shame but this is what happens when an xeno gringa tries to make a Greek dish.
