dairy free coconut custard: PREP TIME 5 minutes COOK TIME 10 minutes ............. *Ingredients* 1 13.5 oz can full-fat coconut milk 5 egg yolks 1/3 C granulated sugar 1/4 C tapioca flour (or cornstarch) 1 Tbsp pure homemade vanilla extract toasted coconut for topping, optional *Instructions* Add the milk to a medium sized saucepan and heat over medium-low heat. While the milk is heating, add the egg yolks, sugar, and tapioca flour to a medium-sized glass bowl. Whisk together to combine (mixture will be clumpy) and set aside. Whisk the milk occasionally until it starts to steam - do not boil. Remove the milk from the heat and while whisking, pour a little milk (about 1/2 cup) into the egg mixture - do not stop whisking. Continue to simultaneously whisk and slowly pour the remaining milk into the egg mixture. When all the milk has been poured into the bowl, give the mixture a good stir and then pour it back into the saucepan. Heat the milk mixture over medium heat, whisking almost constantly, until it starts to get thick like pudding and bubble. Remove from the heat and whisk in the vanilla extract. *Place a strainer over a clean bowl and pour the custard into the strainer. Stir and push the custard through the strainer, leaving any clumps behind. Place a piece of plastic wrap directly on top of the custard and cool to room temperature. When cool, refrigerate at least 2 hours before serving.
you can buy ready made custard which is what I always use for apple crumble etc.., those blue yellow brand one and put it in a piping bag or squeeze bottle

Dreamed of going on Master Chef, but they keep moving and raising the bar. lol One thing about watching shows like these is the same as what I did in 2010. Fought cancer back then and wasn't able to eat for a number of months. Everyone couldn't believe I was watching these shows. As I told them they gave me a goal to shoot for. Well fighting cancer once more and doing the same thing. But there is more to watch now. They give people like me a goal to shot for, a goal that is attainable. So everyone, never give up, give yourself goals. And Ediros I bet you are a better cook now than you think. Always keep striving to better your cooking and maybe I'll see you on Master Chef. I admit not everyone has leftover custard round. But its not hard to make anyway. Stuffed croissant is a really good idea for a warm autumn brunch. Gonna buy a box of costco croissant and try this on a Saturday.
I like to mix a little brown sugar into my eggs before I dip the bread. It makes a nice, sweet dark crust on the toast. I’ve made grilled cheeses with croissants. I cant believe French toasted croissants never crossed my mind

I use fresh strawberry,grape,pear,pineapple puree inside and the top it with whipped heavy cream and mascarpone . Drizzle room temp natural maple syrup / local honey on top . Garnish w / bits of fresh blueberries . Sprig of mint leaf . No dusting needed

Just made this from the book! But the recipe in the video is slightly different from the book and doesnt include the creme fraiche and cinnamon etc but after i made it you could tell it was deffo missing it the toffee apple doesnt form a sauce as well without the creme fraiche. I added the cinnamon though bit daft how its missing from the book.

Expensive pans are made of a non-stick material, not just coated with Teflon that can be scraped off.

Just made this from the book! But the recipe in the video is slightly different from the book and doesnt include the creme fraiche and cinnamon etc but after i made it you could tell it was deffo missing it the toffee apple doesnt form a sauce as well without the creme fraiche. I added the cinnamon though bit daft how its missing from the book.
