I had the best and freshest sushi in the outer market of Tsukiji when the whole market was still active and the Tuna auction was still open to the public...
A year a half later, I was in Japan again, this time studying Japanese and for my birthday, a local friend treated me to the best Tuna sashimi ever. That was heavenly.
    I miss Japan...

Outside japan the reality is, you better learn where to get the freshest fish, japanese ingredients (rice and vinegar) and learn to cook it yourself, it's not that difficult to master, you only need to keep trying, and made at home is really cheap and trust me your friends and family would love it even if it's not up there yet.
At least you live on a country where fresh fish seems easy to get :D that makes that very easy for you already!

The $100 omakase still came out to about 185 yen per piece for 54 pieces of sushi, which is honestly pretty good for value and quality. For a little bit more, you jump up significantly in the quality of the shari and that's the most important part of the sushi experience.

That last plate of sushi in Sydney Australia, in a good level Japanese restaurant here would cost twice that amount. That looked delicious.
Had an amazing Japanese meal as a business lunch last week in Sydney and was amazed at the quality. had a few beers (drinks always a bit expensive in a Sydney restaurant but that how it rolls). apart from that, for 3 people including 5 beers, and a heap of great food worked out about $60 AUD each.....for really good Japanese food. Will be back for sure.

I used to work as a sushi chef in my college days in America. Now, that may sound a little odd, but it was America and I worked in a low end place for a Chinese gangster (I know, but it's true all the same). I didn't have any control over the quality of the fish/supply chain, but that's really what it comes down to. The quality of the fish. Our fish was... not that great. But with maki, I was able to come up with a few creative things. And in America, 'spicy' is a thing, so I liked to do things with that.
My favorite thing to do was to mince maguro with sriracha chili sauce, wrap it in a shiso leaf, and tempura fry it. Deep fried/tempura hamachi maki with spicy sauce and mayo was also a nice - we called it a Godzilla roll. But here, in Iwate, I don't think we get the best maguro, so the fatty white tuna seems to be the best. Or the sakura trout (which is actually a salmon, but that's what they call it).
Here in Japan, I enjoy the kaiten sushi, but I know it's not top quality. It's pretty good, and pretty cheap. The grocery store stuff, and konbini stuff, in Ichinoseki, is more expensive and not as good. I don't know if that's just because it's Ichinoseki/Iwate/Tohoku. I'm moving to Kyushu at the end of this month, so it'll be interesting to see if it's similar or very different (as I suspect). Actual sushi restaurants here are weird, clandestine, little places, and I never know if they're open or if I need a reservation.
It's like, you see these little places with no windows and a curtain covering the door, two or three tables maybe, and 鮨. Yeah, I know it says sushi - I can read better than I can speak, but like, no posted hours, no parking... that's kind of how it is in Iwate. In my experience. My Japanese is not good enough yet for me to ask, and I don't have anyone to help me, so I haven't tried a real sushi place here. But my Japanese is improving, and I feel like next year in Kyushu I will.
I've been disappointed with the fish quality in Iwate based on reputation, and I went to the Sanriku coast specifically for that: Kesennuma, Ofunato, Miyako, and Kamaishi. I was NOT disappointed by the hairy crab I had in Hakkodate, Hokkaido, but it was a little pricey (they are significantly cheaper at the grocery stores in Miyako... but then you have to go to Miyako). Anyway, yeah. Catch you in the next one!

Tbh, as I'll never be able to get to go to Japan for their delicious food (I'm on meds for quite likely the rest of my life to maintain quality of life that Japan forbids from entering into the country), but I do like "sushi" albeit not necessarily authentic- my go to option is preferably brown rice but will take white rice with cucumber, imitation crab and cream cheese. I do like putting a touch of "Wasabi" (because here in American grocery stores, that isn't going to be authentic) and a slice of pickled ginger on it.
I skip the soy sauce though 😅😅.
