Ok so I did this, but for some reason when I was done my hole and loop did not lay flat, they ended up on the sides of that makes any sense. So when I loop through the hole it looks somewhat like a wonky sack instead of a pouch. Any idea what went wrong?

In her video if u look at the last row she ends up not exactly on the side. Then does the 9.. this is what threw me off bc like u my latch was at the opposite end. I had to adjust the count to make it work
I've made a few of these now and I find that for me the end of the round ends on the side of the sack. So when the I start the single crochet row to create the space and hanging loop, I eyeball the placement to make sure both sections are centered on the sack. The number of stitches it takes to center the placement will probably vary, but I'm use to that now.
Another thing that I personally do is create the hanging loop with a Size I (5.5mm) crochet hook and fill in the loop with the same hook as well. Like I would chain 14 stitches for the loop and fill in with 16 single crochets to make it a bit longer and more padded looking.
Great video, what size hook would you use if using cotton 4 ply yarn?
I would probably use the same hook size to be honest. I hope this helps!
