As someone who is polish and makes crepés we call these “naleszniki” and we have a slightly different recipe, we make it slightly thicker and we add more eggs, flour, and a bit more milk to make more, this video is surprisingly accurate in my opinion. Nice job!
Add desired flavor of jam to desired yogurt to taste. Spread mixture thin over whole surface and then roll it up with banana slices. Optionally sear it before serving.

I've noticed too that resting the dough doesn't do much. I think it makes them less likely to crack and break while folding. Because of the gluten, however. I've not noticed any difference at all no matter what. Like the buckwheat crepes I made recently said to rest overnight and I said to myself, NOPE. And cooked them. Also I DO have a crepe pan. @@diyanosaur_29 Totally what I was thinking. Not only that, but it’s got two oxygen molecules. I guess Undead Seadragon is out of luck. Probably a common problem with most of the undead - may also be a contributing factor to their zombie limbs continuously falling off.
I've noticed too that resting the dough doesn't do much. I think it makes them less likely to crack and break while folding. Because of the gluten, however. I've not noticed any difference at all no matter what. Like the buckwheat crepes I made recently said to rest overnight and I said to myself, NOPE. And cooked them. Also I DO have a crepe pan. Yes I have a pan I make crepes in and just crepes.
I also have a crepe pan. But I don't make crepes, after watching this I think I'll make some hahaha

I'm living in Bretagne, the western region of France where crepes come from, and I must say putting salted ingredients like ham and eggs on a crepe is considered to be a sacrilege! Here, crepes are meant to be served with sweet garniture, like the traditional salted butter and sugar combo.
The real salted version of the crepe is called "galette de sarrasin", and is made by using buckwheat flour instead of wheat flour, and by replacing milk with water. It's a delicious dish, which is so emblematic of our region that one of its variant, the "galette saucisse" (galette filled with one sausage), is the emblem of the biggest soccer club of western France, the Stade Rennais ;)
