BABBY the orange topping on the cannolo wasn’t salmon roe: it was sweet mostardo puree spherified to look like salmon roe, the sweetness being the counterbalance against the salt of the mortadella

@@elnoare well it is explicitly a savory dish, but that doesn’t exclude a sweet [fruit] component (like when braciole has raisins); when Syd informs the pre-shift, she calls it a “mostarda ✌️ caviar ✌️ not-really-caviar”, which would make sense flavor-wise because mostarda is candied fruit in mustard syrup
Also, the drizzle was green
I'm forever grateful that this show exists man. Not only for the fact that the writing, directing, and acting is top notch, but it is a gold mine for Binging with Babish content

In the Bear the base is chopped mostarda cherries and the pearls are pearled up mostarda syrup. There were also two oils in the show.

@@ohhimark8028 They don't, but if they're using mostarda syrup to make the caviar it would make sense to use the fruit from the mostarda as the base. And for that dark a color it would probably be cherries or plums, but I thought cherries when I wrote the comment.
@@jtfjtfjtfjtfwouldn't a tapanade make more sense? The pearls were orange so wouldn't they have to make an orange mostarda and a dark one for the base? Also 2 mostarda elements wouldn't be overpowering?

Re: the mortadella being overpowering, the cannoli shell in the show had a more horn shape, thinner in the middle section, so you'd have a lot less volume for mortadella. Definitely harder to roll, you'd have to finish it by hand instead of on a dowel, but it would solve the overwhelming meat mousse problem.

I know nothing about The Bear other than it's a series, presumably about cooking, from which Babish has taking some very fancy recipes. But I'm reminded of the One Star Letterboxed review of The Wolf of Wall Strett: "There were no wolves in this movie."

Thank you for making this. As someone whose love language is food and is also bipolar and a fan of the show, this cannoli carried a very heartfelt and meaningful message with it. It was a truly beautiful moment in "The Bear," and it is one of my favorite moments in the entire series.

Wow seeing this actually made was amazing. One of the best in a while.
The mortadella mousse should have been made with quark or sour cream, add some mustard to max the flavour and try mace instead of nutmeg. I bet that would have made it tastier.

Eating while watching binging with babish is just.... The best.
I love the small bite version, and it make more sense for ratios. It would be interesting to see what Babish came up with for various flavor combinations of cheeses, meat fillings, and foundation/stand mix creations.
The ratios are important. That's why a Whopper Jr. is better than a Whopper Sr.

I love the way Andrew says "Sauce Pan". He's the only person I've heard say it that way, and it makes me laugh a little every time.
the most cooking i do is usually a cheese omelet, or biscuits and gravy. If I'm feeling particularly adventurous I can make a casserole. That being said, I'm definitely going to try that Parmesan cornstarch (wrap?) that you made for some kind of snack.

Yo Babish! For the cannoli shell, use a small ladle, take a scoop, and spread evenly, it sort of like pizza sauce. It works every time!

Once on Hollywood a dude spray painted a The bear poster and made it say “He Bear.” And then people started spray painting more, and more. This kept going till the poster looked like a kindergarten art project (aka someone took bucket of paint (i think?) and splashed it all over the poster.)
Visually, the three little savory cannolis look better on the plate than one big one.
