BABBY the orange topping on the cannolo wasn’t salmon roe: it was sweet mostardo puree spherified to look like salmon roe, the sweetness being the counterbalance against the salt of the mortadella

@@mollydorshimer6424 i totally believe the food stylist used salmon roe though, seeing as no one was gonna eat it and it’d be much easier than doin’ the whole alginate spherification thing that Magic Marcus apparently did off screen for like 100+ orders 😳😳

@@elnoare well it is explicitly a savory dish, but that doesn’t exclude a sweet [fruit] component (like when braciole has raisins); when Syd informs the pre-shift, she calls it a “mostarda ✌️ caviar ✌️ not-really-caviar”, which would make sense flavor-wise because mostarda is candied fruit in mustard syrup

Re: the mortadella being overpowering, the cannoli shell in the show had a more horn shape, thinner in the middle section, so you'd have a lot less volume for mortadella. Definitely harder to roll, you'd have to finish it by hand instead of on a dowel, but it would solve the overwhelming meat mousse problem.
