12 Dinners Kids Can Make. Day 1: Kaitlyn Makes Tacos and a Casserole. Delicious Family Dinner!

- This week each of my 6 kids at home will show you how they make 2 dinners. Every child has a different dinner night M-S where they choose the dinner and cook with me on their night. Sometimes if the rest of the family is still outside stacking wood, they even make it without any help. In this first night, Monday June 10, 2024, Kaitlyn age 14, shows how she makes enchilada casserole and tacos. She had a long day so she was quiet. Sorry that I do so much of the talking. Stay tuned for tomorrow when Tilly makes 2 dinners all by herself and is adorable!

Thank you! I almost didn't publish Kaitlyn's because she hardly talked (compared to her doing the popsicles) and I didn't think it was very good. Also the video I did of Tilly last week doing one of her meals --she talks the entire time and I completely stay out of helping her cook. So I kinda thought I bombed Kaitlyn's video. So sweet y'all are liking it. Tilly will cook her 2nd meal tonight and I'll try to get it posted if the internet cooperates. Sometimes it takes 14 hours...

You're so sweet! I felt like it was the worst video I've done and I'm astounded that people are saying nice things about it. A few of the kids did one of theirs last week so that they will actually be filmed on two different nights and they are a lot better. I'm glad today's didn't deter you from watching the other kids. Thank you! I really felt like it would be a boring video and that she could do much better, but she'd had a busy day and wasn't in a super talkative mood like she usually is. So I almost didn't post it but I'd already promised...

@@singlemomonafarmmy daughter was wondering how you qualified for your loan doing odd jobs. She would love to get a home loan for her and her kids. You have inspired her so much.❤
@@leahleblanc6687 Yes, lots of people have asked under "My Story". I had child support and alimony checks for 6 months before I got the loan. I took a picture of those and submitted them. She can also qualify if she has you to sign for the loan too, saying you'll help her out if she can't pay the mortgage. I didn't do this, but I would have asked my parents to co-sign if it got to that point. I was desperate to get out of the rental, away from ex, and into a cheaper mortgage. Good luck! I hope she makes it work.

OK! I can do a short video on that. We just feed them to our chickens. They love sprouted lentils and they're so good for chickens. But I also love to sprout wheat kernels and alfalfa seeds and others for us. I will think about how to do a video on those. Thanks for asking!

14. She's number 6 but one of the older ones home right now. Check out the rest of this week's videos with the younger kids cooking. They all do a great job!
You remind me of my mother back in the 1960’s and 1970’s. She died at 42 of colon cancer, but lived long enough to see her first grand babies. Since Kaitlyn is so handy in the kitchen she might want to bake fruit/nut cakes for the Holidays to sell. I picked up Bundt cake pans from thrift stores. I make a less sugar version of fruit cakes using frozen or canned fruit with regular cake mixes. I find cranberry, orange walnuts (using cranberry relish made with with fresh cranberries and marmalade jam) and marmalade drizzle over the top, frozen or canned fruit with pecans. Cherries and blueberries need to be rolled in sugar and left to dry to avoid the cake having a purple hue. You can usually get some containers to place the cakes on from thrift stores or dollar stores. I use the lid as the base and the bowl over the top. Something to think about for future video idea. When my sons were high school I put on Holiday parties with lots of different cakes.
