I use a roux and do not use egg and mine is not saucy and soupy. I think the egg is specific to certain regions…not black people everywhere. The soupy ones either don’t make the roux properly or many times don’t use one at all. They just melt cheese with milk and add noodles

Velveeta and American cheese are ingredients that should be used as a part of a whole for the Mac. If you want a cheese sauce that stays creamy, less to no separation, won't get gummy or pasty, then the emulsifiers in these processed cheeses are a sure fire way to achieve it. If you have something against the specific flavor of these processed cheeses, buy some Sodium Citrate. That is the emulsifying salt used and it will allow you to get what processed cheese has to offer but only using the types of cheese you want.

The key to good Mac and cheese in my opinion is cooking the pasta in chicken broth, grating my cheese because already shredded cheese is gross to me because they add a caking agent to it and it doesn't melt right. I use provolone, swiss and extra sharp cheddar cheese in my Mac and cheese.and the milk mixture I use to bind it all together makes it taste amazing. Using chicken broth will not make it taste like chicken in case you're wondering, it just adds a really nice flavor to the dish.
The shredded cheese has a wax preservative caking agent on it, and we can agree it’s disgusting when making Mac and cheese but not with baked potatoes or broccoli casserole for some odd reason.

I love putting a little bit of velveeta in mac n cheese…mainly 2-3 other types as the majority but with a few cubed pieces of velveeta for extra smooth creaminess😋
Now that I'm grown I realize the cooks in my family were doing a lot of guessing when it comes to making mac & cheese. Just throwing a bunch of stuff together in a pan and hoping for the best. I've learned you definitely do not need 5 & 6 cheeses. You can but it can be just as good ( and less$$$$) with just extra sharp cheedar (great cheese flavor) and mozzarella for the "pull" plus proper seasoning. Absolutely no eggs. They aren't needed. Eggs interrupt the creaminess plus cheese setts up well without any help. Lastly, (which is actually foundational) you must make a white sauce. Don't just do what you saw auntie do. Auntie made everything with love but there is always room for improvement.
Can’t be eatin just any ole body’s mac & cheese, it’s gotta have that string of cheese that goes from the pan to the plate and has to be southern regardless of race
Love this series. It is funny, people don’t hold their punches, even the host, but it not nasty and off putting. I think having the taster and the host together tasting at the same time makes for more honest critiques being good or bad, or maybe just really good casting so far. Well made series for both episodes, please keep this up and I will keep coming back.

Now that I'm grown I realize the cooks in my family were doing a lot of guessing when it comes to making mac & cheese. Just throwing a bunch of stuff together in a pan and hoping for the best. I've learned you definitely do not need 5 & 6 cheeses. You can but it can be just as good ( and less$$$$) with just extra sharp cheedar (great cheese flavor) and mozzarella for the "pull" plus proper seasoning. Absolutely no eggs. They aren't needed. Eggs interrupt the creaminess plus cheese setts up well without any help. Lastly, (which is actually foundational) you must make a white sauce. Don't just do what you saw auntie do. Auntie made everything with love but there is always room for improvement.

Love this series. It is funny, people don’t hold their punches, even the host, but it not nasty and off putting. I think having the taster and the host together tasting at the same time makes for more honest critiques being good or bad, or maybe just really good casting so far. Well made series for both episodes, please keep this up and I will keep coming back.

7 cheeses can melt perfectly and tbh velveeta isnt that bad if you add other cheese to give it a great taste. Tbh a LOT of yall have never had Mac & cheese with velveeta, ya just swear it off cause you heard the people arould you do it. My mother makes it with velveeta and most people are literally shocked when they find out. People have sworn my mom up and down thats shes a cook straight out the South when tasting her food, mind you, my family had been living in the North for over 100 years.
