More importantly I wanted to let you know how much I appreciate you starting this channel and really making me feel like I can make great food too. When I was a child we had a kitchen fire due to oil that went awry. It was very traumatic for me. So much that I refused to do more than sauté with oil on my stove top. Recently I watched your vid about your favorite chicken Alfredo. It really inspired me to elevate my chicken Parmesan. I use to bake it in the oven, but now I pan fry it and my family cannot get enough. It is amazing! Thank you for inspiring me to step outside my comfort zone. God bless you and your family.

Wow! That looks so good, need to try this!! Just a note on storing your bacon grease, use silicone muffin cups and pour bacon grease in those using maybe a tablespoon in each one, freeze cups, after freezing these, pop out and store in freezer bags in freezer. Whenever you need bacon grease just pull one or two pucks out of freezer! They thaw out really quick too, so, don’t leave package of bacon grease pucks out on counter, you will have a greasy mess and loose all the little pucks you made! YW!
Everything with chicken is temp! It is one of the hardest proteins to learn to cook correctly though for sure! Use a quality thermometer to make sure you don’t overcook and it will change the way you look at chicken! When I cook chicken for Whitney I will also cut or pound it thinner as she does not like a thick piece of chicken, and it cooks faster as well!
I learned a check from my late boyfriend when we were cooking in the kitchen to keep my cutting board from sliding on the counter you take a non-slip shelf liner and cut it down to the size of your cutting board and put under it and the cutting board will stay and yes, I do like my cast irons. They are really good pans.

Put, a few splashes of apple cider vinegar on them, just like you do with cabbage or any greens, helps takes out the bitterness, if you have stomach issues get a bottle with the mother in it, which you can get at Aldi’s! My neighbor gifted with a bottle because, brussel sprouts are one of my favorite vegetables and, have lots of issues with my stomach and, that with the mother in it makes digestion much easier! 7:38
This looks AMAZING!! Just curious is there another option instead of white wine? We don’t drink alcohol. Keep these wonderful dishes coming. I have already made several of your recipes and they were a hit with the family.
You could use a white wine vinegar, but that would be more acidic so you would want to dilute it a bit with water, apple juice, or broth. You could also try chicken broth which is less acidic and add a Tbsp or so of vinegar or lemon juice to increase the acidity! I use the wine because it has a bit more complex flavor profile, but the alcohol content does cook out while reducing when used in soups, sauces, etc though!
I sent someone a comment earlier! The alcohol does cook off, but there are substitutions that you can use to get similar acidity! White wine vinegar is one, but it’s more acidic so you should water it down a good bit, chicken broth, but it’s less acidic so you could add a bit of vinegar or lemon juice. You can also google popular substitutes, but they will all change the flavor profile in some way.
You could use carmelized or sauteed vidalia onion or zucchini, both would change the flavor profile quite a bit though! You could also leave off completely!
