    Phyllis will you be my guardian Angel? I don’t know how I missed you channel for such a long time but I am happy that I got to enjoy it for awhile while you were still with us. I want you to know I am continuing to cook your recipes in your honor and we are thoroughly enjoying each and every one of them.     Hey there Phyllis I know you aren't here but I do know you can see what I cook along with everyone else that uses your way and I want to thank you so much for being the most awesome woman I know. I do my biscuits the same way you do and they are really so nice and flaky. I miss you so much but each recipe you cook or bake I will be front and center watching. Thank you so much for having such a wonderful son as your Stephen. - he brings such joy and laughter into my days or nights when my pain gets so bad I can't sleep and I have to wait for my pain pills to kick in I can watch you or Stephen and before I know it the pain is manageable and I can sleep again. Sending hugs that are heaven bound for you ❤️ 🤗❤️

    Phyllis, I feel as if I've just met my new best friend. I absolutely love your quiet, humble spirit and your knowledge is fabulous. You are literally showing me recipes my Grandmother from Alabama made...sadly, her expertise and knowledge died along with her, as none of her granddaughters ever tried to learn her methods. You are bringing my grandmother back to life for me with these southern specialties. I can't thank you enough. Please continue to make lots & lots of videos. Just keep teaching us how to maneuver in the kitchen, as you're doing. Love you!!!!

    This reminds me of my mama teaching me how to make biscuits as a child.She has been gone from this world about 11 years now but I have been making these biscuits for many years now and introduced them to my husband who is English. He was confused at first because I was born and grew up in North Carolina but married an Englishman and moved to Manchester, England and here in England they call cookies biscuits so when I told him that I was making biscuits for tea (that is what they call supper here) he thought I meant cookies lol. He learned very quickly what southern biscuits were! :-D

    I would have used a bit if that bacon grease for the eggs instead of oil. RIP Phyllis. The world misses you greatly. Can’t quite get through these without crying. I hope you knew how many people loved you, and how you helped them. God blessings to,your family.

    May I ask you why you don’t use your left over bacon grease to scramble the eggs. It really does give the eggs a wonderful country taste. Also if you are going to put bacon on your biscuit add about a tablespoon of the bacon grease on the bottom of your sheet pan you are baking the biscuit on. I put Crisco on first just like you do then add the bacon grease. I use my fingers to mix the bacon grease and Crisco together. This will give your biscuit bacon and egg sandwich a marvelous flavor. I owed a very success restaurant and the biscuits were the star.

    We call that streaky bacon. You don't need to grease the baking sheet - there is already enough fat on the bacon. After grilling, let the rashers cool a bit then lift on to a paper towel to drain. We make buttermilk scones, but would cut cooked bacon and grated cheese into the dough before baking. Phyllis has left a wonderful legacy!

    Usually I bake my bacon on a foil lined baking sheet pan at 350 degrees (F) until crispy turning part way thru the cooking time. Bacon already has good fat content so I don’t grease my pan with lard first and the foil makes for easy clean up afterwards...of course saving the wonderful bacon drippings. I make my scrambled eggs like you but for me Salt, Black Pepper and a little Cayenne are my selected ingredients for tasty scrambled eggs. However, I never made these biscuits before and I’m dying to make them...I can’t wait...yum! Miss Phyllis you are an inspiration!

    I always take the squiggly out of every egg even if it goes in a cake. When first married, my husband made me do this & I still do it !! I also like the way you get every little bit of food that you can off your fingers & don't waste it. Keep cooking & videoing. I love all your tips.

      learn how to use your signal light .......the "squiggly thing" is technically called the chalazae...which connects and holds the egg white to the yolk.

      Jodie Jividen ....I do the exact same thing to my eggs when I'm preparing them for cooking or baking ....i take the "squiggly thing" (chalazae ) off of the egg whites..lollollollol. ..I thought I was the only one who did that!!!! I'm happy to know I have company!

    Phyllis, I DID it!! thank you for giving me the confidence to try this myself. I wasn't sure, couldn't quite tell how thick you pat these out to; I think I patted mine out a little too thin. But I figured it out. I made the last ones on the pan "gummy" just to see the difference. Personally, I love them both ways! oh, and rather than pat a butter on each, I just took the stick of butter and smeared it over the biscuits as I have delicate fingers (hehehe) Delicious! something so simple and homey. I love your videos ~ thank you so much for sharing your life with us!

    Interesting - I've always cooked scrambled eggs the opposite way. High heat and eggs in the pan for maybe 45-60 seconds tops. I always hated overcooked eggs, so I get them to the point where they are just solid and then finish them off in the microwave. Always come out light and fluffy. But we're here to learn - so I'm going to try it your way tomorrow. Thanks for all of these great instructional videos!

    this is my families second favorite breakfast, biscuits with bacon and eggs. YUM. I make my biscuits the same way as you do. I love your videos and learn something new everytime! we use to have Bi-Lo in our area, but food city put them out, we live in East Tennessee about an hour and a half from both Georgia and North Carolina state lines.

    If you put water in the pan when it is still hot it causes it to warp. I leave mine on the stove, let it cool and then wash by hand and dry. Love your videos. Hope you are feeling better. Love and prayers to you and Mr. Bucky. Miss Phyllis, you make biscuits just like my Mom!

      My cousin used a little plastic red glass like many restaurants had for children years ago, anyway she showed me where her thumb had been for 40 + years and the next time I visited her, she had a new biscuit cutter because her thumb finally gone through, but I had actually brought her my Mother’s biscuit cutter which was missing about half of its knob, I’m sure because my Mother made biscuits everyday and just wore it out.

    Well Miss Phyllis I have done it again, this time I was out of self rising flour and I made my own I went to King Arthur flour and used their directions I had never done this before and I saw you said you can do it but I couldn't find the video, anyways they turned out perfect. My hubby came down and asked if he would have a biscuit after they were baked and I told him yes but take an ugly one, he said they all look perfect LOL Good answer after 43 years he knows me LOL and I am sure he wanted more biscuits LOL
    I did make them sausage and egg, done my eggs exactly like yours they are perfect, also my son-in-law had picked me up some of the waxed paper wraps from Sam's Club ( I had never used waxed paper) they are perfect size for the sandwiches and really I think a good buy for wrapping the biscuit sandwiches. There will be more I plan some chicken ones also. I done 14 sandwiches and froze them, hubby just came down and got 2 for his breakfast. I instructed him to put them in the microwave on "frozen veggies" we have an old microwave and I found this setting touched once worked perfect for 2 frozen sandwiches and he was able to do that and he said they were perfect. You don't know how much this saves me time and also from cleaning the stove top after he has "fried" an egg he usually had them on toast, I did fry the sausage or bacon and had it in the fridge he would microwave to warm up, thank you thank you thank you.
    I hope you and your furbabies have a great Thanksgiving WE have so much to be thankful for here.
    This video should go viral, I just love this idea.

    Phyllis, I enjoy watching and listening to your videos. I was raised in Florida and have been cooking and baking "Southern" for almost 60 years (in fact I still have my Junior Chef cookware). Cooking and baking are passions of mine. And like you - I hate pots and pans that have warped. So I decided to try something, and I found a small faring strip of wood, placed upside-down pan on a towel and on a flat surface - make sure the handle is out of the way - I usually use my doorsteps. Place the wood so that it spans across the bottom of the pan, now tap lightly with a hammer, going around - pivoting and tapping - until it has evened out. You can do the same on inside if it's warped. Have Mr. Bucky try this - it definitely works for me - I hate throwing out something I can fix with a little bit of thinking and analyzing - it puts a little more lifespan to the pot or pan. Keep doing what you're doing - Southern sounds good on UA-cam.

    Phillis, you remind me of cooking with my mother or my older cousin. Last night I made your pork chops and fried biscuits and they were wonderful. The fried biscuits texture is really more like a crumpet. It was quite good. Thank you for teaching and giving me a lovely diversion from work, work, work.

    if youre eating the biscuits and they are gummy at Hardees, speak to the shift manager, and they will do something about it. the biscuits mix comes premade, all you have to do is add buttermilk, and then roll them out and bake. how do i know? i made the biscuits for the sandwiches, and the dinner biscuits. i also made the cookies, which comes pre made, all i had to do was bake them. if they are gummy, they make you throw them away and do them again right. there is a specific temp, a specific length, everything is specific, and it is not being baked right if they are gummy. mine were always light and fluffy!

    Fabulous! I want to make a 30’s small quilt with this tool. Saw it in the bathroom at the Missouri Star classroom when I went to the Featherweight class in Hamilton. It was adorable!

    Love your videos! I'm glad I found your channel. I'm German, but my husband is from Oklahoma. That's where I was introduced to the Southern food, and I love it. We live in Germany now, but I'm still cooking American food. I'm going to try to make your biscuits. I've been making yeast dumplings. I was going to say, you could use one of those little brushes for putting the butter on the hot biscuits!

    Love your channel. I've been a subscriber for a few years and have leaned a lot but, I do believe you got the fresh egg reversed. We have raised chickens for a few years now (for their eggs not the meat) and a fresh egg will stand tall and not run all over your pan. Keep up the good work and I will always be one of your biggest fans. Thanks again and God Bless.

      I think it's a matter of whether the egg has been refrigerated and also remember my eggs are coming from the grocery store. Would love to go out to a hen house and get freshly laid eggs like you can do.

    we're still using cast iron that we've had 100 and some odd what years on a gas stove. These pans started out on wood I know. Every so often we have to burn them in the fire and then went to a big gas grill and close the lid and let them get about 600% but now we have a big gas self cleaning oven, we just put them in there when clean your oven. Great gramma is awfully proud of us to. (maybe 2g gramma)

    First, I’m going to buy this bacon so I can have a little supply of bacon grease. Then I am going to try your biscuits...they look delightful and we love to have something like this for quick smacks and breakfast. You are fascinating to watch and so through with your directions. Wish I had found your youtubes long ago! Please do more....❤️

    I thought I was the only one in the world that took the squigglies out.!! Good for you.. the only time I DON'T is when frying. Baking yes, out they go. I make homemade egg noodles (holidays only) out they go!

    Good morning Phyllis, I so wanted to try your biscuit recipe so I sent my husband to the store for buttermilk and told him to get the full fat, well he brought back the low fat LOL I should have known he is not a good shopper. But I tried to put sour cream in it to make it like you said and I couldn't remember how much you said so I just put "some" LOL
    He was invited to a Veterans breakfast with out pastor so he was not home. Well I proceed to make the biscuits I want you to know I have made spoon and drop biscuits for more than 30 years so this was a challenge. The first thing went wrong I forgot to blend in the crisco I remembered as I was pouring in the butter mil. SO I hurried up and tried to blend it in, not sure i had enough buttermilk but I turned it out on parchment paper ( I didn't have waxed paper) and tried to form it to cut out, well I forgot to find my biscuit cutter so I used a wide mouth pint canning jar, didn't do too bad, I put them in the oven and they turned out pretty good, I was really proud of them. My husband just came back from his breakfast and went to the kitchen, he called out "are these biscuits" LOL They were tasty anyway, I will try to make them again but I will share these with our church sister, she will eat anything, LOL

    I save my bacon grease in a pint jar. Love using it for many things.

      I’ve had no bacon grease for ages, finally bought some Jimmy Dean bacon and not sure this is a good thing, but I got quite a bit of grease from it, I think I’ll be able to fill up my jar pretty quickly. Now if I could just find out how the green beans are made at Babe’s.......
