This is what I absorbed from the cooking process here:
Cooked reverse sear method: oven cook @ 225°F for about 20 min until internal temp is 115°F, then sear in cast-iron on high heat for 1½ min per side for a nice brown crust develops, then add butter and thyme to the pan and baste in butter for an unknown amount of time until internal temp is between 125-130°F for medium-rare.

I switched up the ingredients for what I had. I used apple cider vinegar and apple juice for the marinade. Cutting perpendicular to the grain of the steak is something I never thought of. It turned out really great. I may or may not of licked the plate lol

Wouldn't sealing in the marinade with the food saver overnight, then putting them in the sous vide to ~125, then allowing to dry slightly before throwing a super hot sear on them accomplish the same thing?

I had a pair of em from my butcher box, so I tried this. They turned out OK, but I skipped the overnight marinade for just a few hours. I think they needed the overnight. Too tough for a steak, in my opinion. They're priced like NY Strips, so I'll just stick w/ NY Strips.
My husband prefers medium well. With a Rancher Steak would that be tough?
I just used salt, pepper, butter and garlic. Came out great medium rare.
Where can we find the recipe for the marinade?
Mine came out perfectly cooked, and tasted amazing! But, I marinated over night, sliced super thin and still the cut is a little too tough for my taste, they will not be in my next box. Thanks for the video, I will try the same recipe with another cut of meat.
What are the measurements for the Marinade?
I really wish precise measurements were given for the marinade. I hate having to estimate how much of the ingredients.
This is great when you're only doing two steaks. I have a large family and usually I'm cooking six steaks. Using Yankel's technique I've got three cast iron skillet going at once trying to baste all with butter while not over cooking. It's not easy. I wish Yankel would demonstrate cooking multiples for a large meal.
Same here! This is my only “issue”. I am cooking for six as well, and it is always a challenge.
Put your kids to work! Have your oldest help out in the kitchen. I wish I would have started cooking earlier. You never know, maybe they’ll fall in love with the process.

225 seems awfully low
Can I just do it with orange juice? I don't like vinegar flavor in meat
Anything acidic will work. You can also try an enzymatic marinade like honey or ginger(though note that these will tenderize your meat faster so you can’t leave it in as long).
Where can I find the exact measurements for the marinade?
I suggest you use your intuition combined with basic
"eye-balling" making sure there is enough to cover the steak. A big reason for this is there are variables to the size of the steak/marinade and baggie size ratio. Of course, this is coming from someone who is an awesome cook who doesn't bake for a reason ;) Best of luck to you and my son who uses a scale to weigh his meat, would calculate the size of the bag, and NEEDS exact measurements lol.
Yea I got these in my box followed the recipe and did not like the way they tasted the vinegar gave a it a really bad taste and smell maybe I put to much but ether way if this is what you have to do to get meat tender then it’s to much in my opinion I’m skipping on getting these next time
