    To get an actual seer, especially on a rare like that, you want less salt and oil.
    Best to dry the steak with a towel before cooking, or even setting it on one in the fridge the day of so it'll be more dry.
    This is why carbon steel or iron is preferred. You can reach much higher temperatures than other cookware. Let the pan get screaming hot, put a small amount of just a second before you put the steak in. Your pan wasn't hot enough when you put the oil in as evidenced at 1:25. Your pan was barely warm, and then you were just heating up the oil to maybe 400 degrees and it starts smoking. Cast iron can withstand 1500 degrees. Good seasoning starts to burn off about 800. That's about a 400 degree window of opportunity you missed out on by just heating up the oil in the pan, rather than heating up the pan and then adding oil.

    The fat shouldn't be white...
    Elsewise, you would need to cook a leaner cut of beef.

    Didn’t get much of any sear there tho. Your pan was maybe too hot when you placed the Denver on allowing it to contract and not have great surface contact.

      The sear was fine. You seem to prefer your steak over done, that's all.

      @@sandieguitoadult I know what I’m talking about broski. I like my steaks medium rare. That was a very weak sear it can be easily remedied by letting it sit on a rack in the fridge over night and keep it dry as possible. I’ve got tons of pics if u care to see😅. I hope you know in order to get a better sear you don’t have to cook it more. Just learn to prep the steak right beforehand.

      @@sandieguitoadultit’s a terrible sear. They should have heated the pan more before adding the fat or the steak, this allows the exterior to brown properly, without overcooking the interior. They also used way more tallow than they needed.
