Kim I just "discovered " you on Plant Strong . I am a 74 yr old 2x cancer survivor w cardiac issues who became vegan 4 yrs ago . Since then I have learned to make veggie meats , vegan dairy & everything else that is healthy . I just bought yr 3 cookbooks & was blown away by saw I saw . This morning I made the Tofu Cashew mayo & also the Tofu mayo . I use lentil tofu so I found I had to add 2T water & 1 T lemon juice to the Tofu Cashew mayo as the lentil tofu is drier . W the Tofu mayo I added 1T water & 1 T lemon juice & 1/4 t xantham gum . The taste of both is absolutely delicious . Thank you for all yr hard work . I already have recipes marked off to make ! So sorry this is so long .
I just found you on UA-cam. I immediately bought 3 books: Plant Pure Comfort Food, Plant Pure Nation Cookbook, and The Plant Pure Kitchen. After watching you, I am so excited to now try these recipes out. Thank you for taking the time to do these recipes on You Tube.
Thank you SO much for your recipes and for showing them through video. I need everything spelled out for me (visually is better) and the fact that you showed us how to thin it out and what 'toppings' we could put on is SO helpful to me!

What type of blender are you using?
I'm using a Nutribullet 900.
In the cookbook it calls for 1/4 cup cashews but you said 3/4 cup in the video - it is 3/4 cup?
Do you have the recipe book in spanish?
