    Meatloaf used to be one of my favorite things . Always looking for a really delicious no meat loaf . I just bought all 3 of yr cookbooks in the last few weeks . Have already cooked out of them . Can't wait to make this recipe ! ❤ Thanks for all yr hard work & these beautiful recipes that are so wonderful & doable . I'm 74 & became vegan 3 yrs ago

    The tech was misbehaving so badly last night. I felt for you guys. However, we love you SO much that we brought our tenacity in SPADES.     I’ve already made this from the recipe book. It was fabulous! I also love the mushroom gravy which I now use in many meals. When I make it again I will the shortcuts when prepping the veg!

    This is my favorite 'loaf' recipe. Once the mixture is pressed in the pan, I use a chopstick to poke some holes in the loaf before spreading on the sauce so that tangy flavor gets absorbed throughout. Using the food processor makes this a quick any-night meal, as all of the ingredients are usually in my kitchen. Another EXCELLENT recipe from Kim!

    Kim, I love that you do these shows. The PlantPure Nation cookbook is my favorite vegan cookbook. I am going to try the beanie loaf this week. Question: The loaf you put in the oven was much higher than the finished loaf, does it cook down to that level? Looking forward to seeing Dr. Campbell next show. P.S. Video playback was beautiful.

    I made this also and had the same undercooked problem....I actually had to cook it for 2 hours to get it to a semi-solid state! It is still (believe it or not) a bit on the wet side. It is delicious but wow What did I do wrong? I also live in Colorado.

    I made this last night! The only issue was that 35mins in the oven wasn't long enough cooking time as my veggies inside were still a bit crunchy. It was still very tasty!

      Mine seems mushy and not solid. I’m leaving it in for another 20 minutes. I live in Colorado so maybe it’s due to altitude?

      Oven temps can vary quite a bit so I'd leave it in for an additional 10-12 minutes. Sometimes if you don't process the veggies enough they can remain a bit crunchy. It's even better the next day:) Glad you enjoyed. 🌱

      Same here after 45 minutes yesterday. Today, I have made patties with it cooked in the oven at 425F for 20 minutes. It was great.
