Hi I have a question, can you please help me on what I did wrong? I tried making blackberry lemon zephyr for the first time for valentines day and for some reason when I had my zephyr sit uncovered in room temperature kitchen for like 12 hours, it did not set and was still wet to the touch. Do you know why that happened? I did use 1/2 more egg white because I felt the puree and egg were not getting fluffy within 10 minutes. I did also use a hand mixer since I did not have a stand mixer like yours. So I had to whip it first then make agar syrup next seperately. I also whipped egg whites what seemed like 20 mins I'm not used to working with egg whites or agar agar. 😅 I hope I get the cloud-like with hardened outside like yours. My zephyr came out more like a mousse unfortunately. 😢
Heyy Britt! Ok so first thing you used lemon - lemon is acid which will not make it whip, so you cant use lemon in any zhephyr recipes, unless you use dry eggwhites. So you have to use pure blackberry puree. Then i would also suggest doubling the recipe - and keeping the correct measuremenets. The egg whites need to be whisked up to soft peaks, so make sure you bowl is clean, whisk is clean and there is no fat/oil - as this will cause them not to whisk. You can still do it with hand mixer no problem, just follow the same steps, with agar agar and the key things i mentioned above! I hope that helps!

Oh wow, I didn't even know that about lemon that you couldn't use it with zephyr recipes because it doesn't help whip up the egg whites. 😮 I will try the recipe again but omit the lemon and well as only trusting to use 1 egg white. What are your thoughts on this: I heard that pectin helps set zephyr as well and I was recommended to add apple puree to my zephyr due to the natural pectin or use a powder pectin. @@Linkfan007 yeah def no lemon, for this recipe i didnt use pectin and blackberries are very high in pectin, so if you do the recipe correct they will work out perfect! :) by doubling, i mean double everything by 2 all ingredinets and make it again, it will be easier.

And 1 cup of sugar with my blackberries when I was boiling them would be 2 cups; 1/2 cup of sugar with the agar syrup would be 1 cup; and 1 egg white would be 2 egg whites? I used 2 cups of blackberries in this recipe and I would keep that the same. Is this correct on how I would go about it for what you meant? If you can, please let me know, thank you. 🙏❤😅
At 1:40 you said Egg Yolk but did you mean Egg White (Belok)? I could be wrong but that's what it looked to me like you added. That's cool stuff I've never seen Zephyr scratch-made before!

its a mix between marshmallow and meringue :)
