I made this sauce tonight and it was absolutely amazing. So quick and easy too. I had halibut fillets and I coated them in olive oil, salt, pepper and garlic powder. I then dusted them in flour seasoned with smoked paprika. I pan fried them in olive oil in cast iron to 145. The fillets made excellent fond in the pan and provided a great base for the sauce. You hit it out of the park with this one.

Thanks for watching. Ingredients: - 1/4 cup or 63ml White Wine - 3/4 cup or 187ml Heavy Cream - Zest from Half a Lemon - 1 tbsp or 12ml Lemon Juice - 2 tbsp Parsley - Pinch of Pepper - Pinch of Salt
Take your favorite wine for cooking, poor a small measure into a saucepan and heat it until it gently boils. Allow to cool and taste it. I came to the conclusion why anyone would use wine for cooking is beyond me.
