A sprinkling of cayenne and a little lemon juice elevates this to a whole new level.
Whole milk works just fine for this sauce. Heavy cream is just deadly. I just increase the flour so it stays thicker. A 1.4 c dry vermouth really helps this sauce as well.

can i replace the butter with margarine? and is it good with calamari? or shld i use a different stock for calamari? ty
@@nagmus887 The only thing you should use margarine for is to grease your wheel bearings. Heaven forbid you put it in your body.

I use this sauce as a base for cauliflower soup. A little more stock and of course, a grate of nutmeg. Stir in cauliflower, and you can easily stir in some grated cheese for cauliflower cheese soup. This is my kids comfort soup when they are sick.

Thanks so much for this recipe!! I followed you step by step and it came out PERFECT! My family loved it and there was not a drop of sauce or any rice and chicken left on the plate.
Want to elevate it to a whole other level? Fry off some bacon lardons in the pan first, remove the bacon and set aside. Then fry finely chopped shallots + garlic + thyme. Deglaze with about half a cup of white wine and cook off the alcohol. Add the bacon back in, then butter, then make into the veloute and add the cream.

Wow, that came out just... wow. Better than thanksgiving turkey gravy. I added some fresh poultry herbs to the broth and had to cook it a bit quicker, but it still ended up great.

Just happened to stumble on your channel and gravy and sauces are easy meal makers for everything. Could you simmer uncooked chicken in the sauce and then shred it or would the sauce break?
Yes that would work. It shouldn't break the sauce.

Since this a veloute and cream sauce, would we have similar results if we added stock to a bechamel?

How do I make chicken stock? I'm no cook lol. But I have ago and source is key ;-) I normally use Oxo cubes.

Roux uh ok, Mother sauces yikes, no deep breath’s, 😅 Trimmed my skinless bone in chicken breasts & tossed in bones & bits in with my broth with pinch of poultry seasoning. Oui J’aime poulet. Can we use 50% whipping light cream with fresh milk?
Heavy cream is best. But you can use a light cream and milk if you like. It will still turn out to be good. Let me know if you try it out. Thanks for watching.
