Yes, the egg whites went into the meat mixture. The potatoes and eggplant were fried in olive oil ahead of time. The number of eggplants depends on the size of pan. I don't recall how many she used this particular day, probably 2 or 3. The milk was evaporated milk which she had available at the time, otherwise she would have used fresh milk. She said if you use fresh milk use 1 liter. Cinnamon is often used in pastitsio and mousaka. She used all spice on this occasion. This was a really impromptu video, as you can probably tell. Yes. First she melted the butter, then added some flour, then added the beaten eggs to make the béchamel sauce.

If you can cook, you know how to add salt and pepper to taste. As for spices and grated cheese, if any, you decide by yourself which and how much.
