Hi there !
Hope you enjoyed the video and i hope it was helpful.
I must say when doing this the fan shaped chocolate decoration was my favorite, its so easy yet the result looks very elegant and professional. it can really complete a cake so well. I will say the key to this project is ensuring your chocolate is melted well and used quickly. You dont want cracks when you start adding your bulldog clips when creating the fan.
When inserting into a cake, push down at least 2" into the cake. Ensure the chocolate thickness is at least 1/2cm thick for a sturdy decoation. They are fragile so when inserting do it with care.
Wax paper or parchment paper can be used also as a surface.

Hello! 😀How long do the shards hold their integrity after they are inserted into the cake? I would like to do something like this for cupcakes. But I worry that if they sit at room temperature for an extended amount of time, that the shards will go soft and collapse.

Yeşim C. You would have to add food grade dye to white chocolate I would add a few drops when you have finished temping the chocolate... that way you can add more if it is not the desired color you wanted.

If i use normal white chocolate coins, at which temperature should it be tempered?
there are tutorials you can google for this, im no expert in tempering unfortunately
Maj, how wide should we make the circle before we ruffle it? How long should we let it set in fridge?
Any size you prefer, this one was around 5" by 7" then i added pleats to it. Just ensure its at least 1/2cm thick so its strong and sturdy. Hope that helps. Leave it in the fridge around 15mins that should do it :)

What do you add on candy melts I can't get a good consistency when I melt them in the microwave I am heavy cream but when I add heavy cream and the chocolate doesn't set well please

Hi there Joralys. So i don't add anything to my candy melts when i melt, i melt till smooth.
Melt it 30 seconds and mix and turn if there are still chunks melt again maybe 20secs but for short amounts of time and do this till smooth. All microwaves are different some more powerful so you will need to test this on your own microwave to see what works.
Sometimes heating all in one go for too long might burn the chocolate and it just becomes chalky. At that time there is no saving it. Adding cream wont fix it and you will need to start again with new chocolate. Hope that helps.

Instead of buying coloured melts, can we colour them or not?
Georgia I used Candy Melts because it didn't require tempering. You can use cooking chocolate too and color if needed. Hope that helps. It's up to you if you want to color the chocolate.

Ahmed you might have issues painting over the wet chocolate as it can disturb the chocolate finish. You can mix the color into the melted chocolate before using. But after can be tricky, unless your just adding lustre dust as a finishing touch
