How to prepare Tuo Zaafi (TZ ) and Ayoyo soup

  • Tz, tuo zaffi, diehuo, is a popular dish in Ghana which originates from the northern part of the country. It is in fact, a meal enjoyed in other African countries. It is is not just delicious, but highly nutritious and very loved by children due ti its very soft nature. Both my kids love it! Why don't you give it a try?
    okro Ingredients
    1 14oz package jute leaves/ayoyo (or a bunch of fresh one)
    2 small herrings,
    1 teaspoon baking soda
    20 grams dawada (african locust beans)
    salt to taste
    3 cups water
    Ingredients for tz
    6 cups water (1 cup to mix corn flour and boil 5 cups)
    2 cups cassava flour (kokonte)
    1 cup corn flour (aburo gari)

    Correction here loves. Aleefu is not same as ayoyo or jute leaves. My bad🤦🏽🤦🏽🙈🙈.
    Also, you may want to set some of your porridge aside and add gradually after adding the cassava flour (kokonte). I haven't done that for the longest time. However, my tz texture is always great .

    I suggest that u fetch some of the porridge aside so u can use it as water incase the TZ becomes hard 😊😊😊😊

    You can blend some okro and add it to the ayoyo since the frozen ones we buy here are not that slimy

      not everyone adds the okro if yo get the ghana one which is supper slimmy you dont need to add

      hellen pokuahsarpongbuabeng I understand it isn’t healthy. Kwankyewaa used baking soda and it does the same thing

      yh it is normal to put baking soda if you dont have but the typical tuo zafi is made with kawe

      it is actually the one we use but those in abroad normally use baking soda which does the same thing but it is healthy to use the kanwe

      Yes but you would have to blend it with okro to give it the sliminess you would need
