How to make Shinkafa/Kyinkaafa/ Kwankwan/ KwenKwen. A step by step guide for the perfect shinkafa

  • Kwenkwen wura no aba ooo. Yes, more Hajia Kwankyewaa moves. So do you know Shinkafa/Kwankwan/ kwenkwen/kyinkaafa? It is a meal from the northern part of Ghana, a hybrid of jollof and waakye is how I always explain it. It is made with local brown rice from the North. The flavor and aroma de3!!! Kumasifo) mo w) he? It is a pleasure to always bring you authentic and replicable recipes. I hope you enjoy this.
    Ingredients:
    340 grams shallot
    8 cloves garlic
    15 plum tomatoes, blended and cooked down
    Some kpakpo shito
    1 habanero
    250 grams tomato paste
    1 cup virgin coconut oil
    1 Maggi tablet
    2 tablespoons powdered shrimp
    About a cup flaked amane (dry herrings)
    1 teaspoon aniseed (nkitinkiti)
    1 teaspoon corriander/ cilantro seeds
    5 hwentea (grains of selim /negro peppers)
    120 grams Momone (fermented fish)
    4 cups shinkafa/ kwenkwen rice

    Tried with red rice n its amazing! The fĺavours r wel balanced. Taste is on point! Wish i cd pòst pics here. The coconut oil is as flavorsom as sheà bùtter if nòt more! Actualy i prefer da cocoñut oiĺ. Momone is màñdàtory in thìs dìsh! Cast iron pot çooķs it perfectly. I just cant wàit for my gh ŕice now. Tnx kwankyewaa😍😍😍 u r dà absòĺute bestest at this!       It is very delicious sis. Especially if the rice is well cleaned. Yes, some African markets sell the rice. I used to get some in New York and Delaware. Hopefully you're able to try it.

      @@selasieafesi6380 it came out great. Just use a reasonable amount of Shea butter for the kwenkwen. Make sure u have enough herrings without the bones (I get the dry ones from the market n I strip it long cos I want to see n chew the herrings lol 😂. Use calabash to cut the rice to remove all the stones n debris. Is lot of work but worth it
