In Serbia we also have spinach pie but it is originally made with hand made dough and it is made only from spinach, salt, feta cheese, eggs and pig fat. And it is eaten on its own. It is delicious and one of my favorite dishes.

Very good try .... but why the oregano ??? Dill and parsley are the original flavours with spinach pitta as our mothers and grandmothers use to make it ... Apart from that it looks really good !!! Bravo ....🇬🇷

As a Greek I would like to add a few tips for anyone making spanakopita. It is truly not necessary to saute your scallions or leeks and spinach before hand. I promise you will not see a difference and save time. Please add your feta before you add your salt. Ricotta is a nice addition perhaps but not an original ingredient in spinach pie. Once you score it before baking and adding some oil on top, sprinkle water over the phyllo. It will help keep it compact and prevent it from popping up. Enjoy.
@@No1Crispin Not if its fresh. If frozen then yes you need to thaw and squeeze out the liquid. Personally, I always pre cook the filling. It was necessary to let people know that many do not. I always oil my pan a bit and sprinkle a very light dusting of bread crumbs to absorb any liquid I may have missed.

That's a version of the Greek spanakopita. Greeks, who live in Greece, don't put parsley, nutmeg, oregano, lemon zest and onion. We only use spring onions, leeks,dill, nettles and a variety of other leaf vegetables.That's all. We usually eat spanakopita with greek yogurt not with salad.
Your mum is correct it is more delicious if you don't boil it. The only thing is if you eat a lot of spinach than for health reasons it's better to boil it (spinach contains oxalic acid and this acid dies once spinach is boiled) ❤

There’s no way you can make a spanakopita without baking ....unless you want to do exactly the same as in video, instead use shallow pot on the top of the stove ...but still the pastry would need to be cooked on top and you might end up with it half cooked or uncooked in the middle ...sorry...
Another way you can do it, is not to use fillo at all, add a couple of eggs in the mixture put it in a frypan and cook on stove like a frittata....it turns out really nice and without the extra calories of the fillo and butter ....try it ....

Wouldn't the moisture in the spinach ruin the flaky crust of the film if you don't pre-cook it and strain it?
