That's a good question. I personally don't use topshots like Dylan does, but it would be reasonable to say 25 to 50 yards. That gives you many opportunities to use the fluoro or mono topshot without needing another one for quite a while.
For just grouper you want alot of backbone in your rod and alot of drag pressure with strong line. 7 to 8 ft rod and a 6000 to 7000 series reel with drag around 80% locked. Sometimes you may need full lockdown on the drag if fishing right by pilings.
Top shot on a bottom reel is really counterproductive to what you're trying to do Tim and that is to bring a big grouper out of his home NOW with absolutely the least amount of stretch possible. The same with two speed reels. You want to gain as much line as fast as possible. Drag and speed of retrieve is the key to moving big fish away from obstructions. 2 speed is great on a prolonged fight like a big tuna but not so much on bottom fish. Trolling is a whole 'nother ball game.

5000 would probably be the minimum.

Haven't used it but it should be just fine. In a 6k to 8k size for good size snapper and grouper.

Both actually
Standard bottom rig with mainline through a 6 or 8 oz egg weight, tied to a swivel. Then a 3 ft leader line from the swivel to the hook.
What lbs test on the bigger reels?
Most people use 50 to 80 lb mainline on their bigger bottom setups.
