Mono works great. You can use anything from 50 to 80 with no problems usually. If the fish are being unusually picky, try a smaller leader. That giant in the video was caught using wire leader though.

Fluoro is unnecessary for red snapper IMO. Yes anything between 50 to 80 works good.
Do you use knocker rigs? If so when you hit bottom, do you leave bait at weight or feed some slack?
Traditionally I use a fishfinder rig for red snapper but a knocker can work.
I keep the weight felt on the rod tip.
