Eating from the Larder: Episode 3

- Welcome to my series, Eating from the Larder! We spent all summer and autumn putting up food and we are now enjoying our toil! Each episode is short and sweet, featuring a breakfast, lunch, a snack, and dinner- made from things we've canned, frozen, or have stored in our pantry. These meals are not necessarily all from the same day, just whenever I get a chance to take out my camera and film what I’m making.
Everyone has their own “family larder”, even if they don’t garden or can their own food. If you have ingredients in your cupboards- whether store-bought, homegrown, or local- you have a larder! Winter is a great time to get creative with what is in your pantry, and trek out to the grocery store less. It is my hopes that this series inspires you to eat from your own pantry and have fun while doing it!
In this episode I open some raspberries preserved from our summer garden, turn some some home-canned tomato basil sauce into soup, and use up a butternut squash. You can find all the recipes below. But for now, cozy up and join me in my kitchen :)
RECIPES:
🧇 Properly fermented sourdough pancakes or waffles:
The day before combine:
3/4 cup of fed and active sourdough starter
1 cup of buttermilk (I never have buttermilk on hand so I simply add 1 tablespoon of vinegar to regular milk)
2 eggs
4 tablespoons of butter or coconut oil
2 cups of unbleached all purpose flour
1 tablespoon of cane sugar
1 teaspoon of vanilla extract
Mix all that together, cover with a lid and let that ferment for at least 12 hours in the fridge.
The morning of:
Take the dough out of the fridge at least an hour before cooking to allow the solidified oils to soften. Then mix in:
1 teaspoon of baking soda
1 teaspoon of baking powder
1 teaspoon of salt
Cook in a hot, oiled cast iron pan as pancakes or in a preheated waffle maker for waffles.

🧅 Butternut Sausage Soup:
1 pound of ground pork sausage
1 onion
1 bulb of garlic
1 butternut squash
4 cups of bone broth
Dried sage
Salt + pepper
Orzo pasta
1. To begin, I browned the meat in a cast iron soup pot, and added in my onions, sauteed those for a few minutes and then added the garlic and sage, salt and pepper.
2. After the onions, garlic and meat have cooked, I add in the peeled and chopped butternut squash and bone broth. Brought that to a boil and then allowed to simmer until the squash was soft. Salt and peppering as I go.
3. In a separate pot I cooked up Jovial Food's cassava orzo and served that with the soup along with fresh sourdough bread. Quick and delicious! Tastes like autumn in a bowl 🍂

Thanks Wanda! No, I'm not Shaker or Amish or even Mennonite. Shakers actually do not really exist anymore because they believed in celibacy, even in marriage. Amish do not use electricity and therefore will not be found on the internet. I admire the Amish and Mennonites for many things but I also disagree with them on many others. I am simply a Christian woman who enjoys homemaking :)
