I'm a Nigerian To make it excellent, Try to add 1. Bullion or stock cubes (we call it maggi) 2. Carrot, diced or cubed 3. Beef broth. It gives a new universe to your food 4. Slice the onions instead of dicing as the presence alters the taste and experience 5. Fry some plantains please
Rice is rice. He loved it, and thats what's important. Basmati is very good with jollof too because it makes the jollof separate and not sticking rice together, clumping it up.

Jollof itself is originally a Senegalese dish that's has been adopted by Ghana/Nigeria/Liberia..it was never originally ours. When u see it done by Senegalese, it's almost quite tedious and takes a couple of hours to prep and cook. It contains all kinds of vegetables including eggplant, carrots, etc., cut up in big chunks, and not ground, and big chunks of fish etc. Try and find the Senegalese jollof on yourube, and you'll see what I mean. It's a whole intricate affair. The name itself is a tribe/area in Senegal, by the Wollof people. Good job..now happy Senegalese jollof hunting!!
