It's because the show is scripted. The bargaining is real and they do actually buy items from the customers, but the shooting days are planned beforehand and they actually know what items are about to come in. That's why most of the items on the show are still somewhat cool and interesting, you don't see people bring in everyday items like toasters or televisions. If you went to the pawnshop on a regular day trying to sell something, you wouldn't see a glimpse of anyone from the main cast.
