Perhaps it was built by the white walkers in the first place, no number of men or giants could have built such a huge structure in a little time. Either the children of forest or the walkers must have made it.
His voice is brilliant. His original Scottish accent is better though.

Let's give them prisoners and outcasts because those are very honorable men, some honorable that they stab their one commander
NakedAvanger Maestor Aemon said that men would choose love over honour.
Love and family make people do stupid things, and the point is to be watcher's on the wall... not just against wildlings (Despite Alliser Thorne's views), but for the White Walkers and their army of wights. Even if people in modern Westeros scoff at the idea of them ever coming back, or existing to begin with, that's the reason the wall is there. So, the Night's Watch can't risk dividing loyalties between the Night's Watch, and wives and children.
Also, they _used_ to get a lot more volunteers, from far more wholesome origins. Men who are the far younger sons amongst many siblings, who don't stand a chance to inherit land, wealth, and titles, and so can't hope to marry well. Probably anyone from the smallfolk who couldn't make ends meet toiling away, and decided to join to avoid starving to death and going without shelter, too. They would have far outnumbered the petty criminals, and kept them in line. It's just that such men got either complacent about the need for the Night's Watch, or they got caught up in the petty War of the Five Kings, most likely as soldiers for one army or another.
That was before he joined though, Joer Mormont joined the Night's Watch after Jorah had already grown up and fled into exile
