  • These golden butter bathed dinner rolls are the ones you’ve always dreamed of. Golden brown on the outside, soft and tender on the inside and soaked in a rosemary garlic butter before and after baking, they will become your new favourite dinner roll. FULL RECIPE BELOW.

    FULL RECIPE: GARLIC BUTTER DINNER ROLLS
    2 ¾ - 3 cups unbleached pizza flour or all purpose flour ( 725-750 ml)
    ¼ cup semolina (60 ml) or cornmeal
    1 tsp. instant yeast (5 ml)
    1 cup warm milk (250 ml)
    2 eggs
    ¼ cup (60 ml) butter
    2 Tbsp. honey (25 ml)
    1 ½ tsp. salt (7.5 ml)
    2 Tbsp. butter for brushing (25 ml)
    1 clove garlic, crushed
    1 Tbsp. chopped fresh rosemary (15 ml) optional
    Fleur de sel or course salt
    In a medium bowl, combine 2 3/4 cup of flour and reserve rest. Add the semolina, yeast,. Stir to blend.
    In a small bowl whisk together the milk, eggs, ¼ cup melted butter, honey and salt . Blend.
    In a stand mixer fitted with a dough hook , pour the wet ingredients and turn machine on number 2 speed. Slowly add the dry ingredients, until dough starts coming together. Continue to work dough on 2 for 4-5 minutes until dough comes together and begins to look smooth. should be tacky but not sticking to the bottom of the bowl.
    Transfer to a work surface and continue to knead until smooth. If too sticky sprinkle a bit of the reserved flour as needed. Shape into a ball.
    Transfer to a buttered bowl and cover with plastic wrap and let rise for 1 ½ hours or until doubled in bulk.
    Cut dough into 12 even pieces. Have some flour in case dough sticks to counter. Roll each piece into a ball. Transfer to a parchment lined baking sheet, arranging in desired honeycomb pattern. Buns should be just touching and will expand as they proof before baking.
    Cover with a tea towel and let rise at room temperature for 45 minutes or until doubled again.
    Preheat oven to 375 D placing rack in bottom third of oven.
    Heat remaining melted butter in saucepan with crushed garlic clove for 3-4 minutes, just to flavour gently. Add the rosemary. For more garlic flavour, chop garlic and save for brushing on top of baked buns. Brush buns with butter and sprinkle with fleur de sel or course salt ( which I did not do in video ) bake for 18-20 minutes , at 375 D, until golden brown. Remove and while still hot, brush again with garlic butter and the chopped garlic, if desired.
    Buns should be golden brown on top and bottom. Cool and serve.

    Terrific recipe! We made your buns for our New Years Day dinner and they turned out wonderful! I didn't have a dough hook mixer like you, but simply used my regular beaters to mix in 2/3 of the flour and the rest by hand. Love your tip about arranging them differently. And your infectious enjoyment as you tasted them, and then at the very end, exclaimed, "Buns baby buns!" made my day.

      @@ChristineCushing my dear i live in holland. Here we use 1 cup flour thats 125 grams here. În usa i have seen in many recipes 1 cup is 130 grams flour. In autralia 1 cup is 150 grams flour. But i see u use lots of flour for 1 cup. How much u use for 1 cup flour is it 200 grams or 250 grams ? Thx

      @@jasybrigde4136 Hello . I would just like to clarify the recipe ( and most home recipes) is given in volume form, as most people don't have scales. The 250 cup equivalent is in millilitres not grams. I cup of all purpose flour weighs approx. 150 gm, if you have. a scale. I hope this helps.

      @@ChristineCushing thx dear i was soo affraid of the recipes but i will hold on that 1 cup that u use is 150 grams. King artur for exampel use 1 cup 120 grams and joy of baking ise 1 cup 130 grams but if i will try ur recipes i will use 1 cup is 150 grams flour thx

    These look so wonderful! Have you ever baked with or made fresh pasta with 100% einkorn flour? (I playing around with the Jovial brand - harvested in Tuscany) (no, I am not affiliated with this co.) It has never been hybridized, it has no grass as modern wheat has been.
    It has a hearty texture-
    my more protein-
    and a different/ lesser gluten structure.

    Question for you - I usually use my convection oven setting - will that be OK for baking bread? (My oven adjusts for the temperature difference automatically)

      Yes, convection is ideal for bread as it circulates air and gives a more even and drier heat. Each oven will have some slight differences in timing etc. I hope this helps and thanks for watching and glad you are enjoying.

    Hi I'm really confused the 3 cups doesn't equals to 750ml. Can u please explain how did u get 750ml

      3 cups is always translated into 750 ml. A cup is 8 oz. approx. 240 ml but 250 ml is the official conversion we use for cookbooks etc. I hope this helps. Thanks

    In your recipe, do you mean "grams" for the dry ingredients?

      This recipe is all in volume and not weights , as most people don’t have scales. So even in metric it’s ml not grams. I hope this clears it up

    What if you can't have gluten

      You can buy a gluten free flour blend and follow the recipe. When you shape the rounds put them into a deeper dish where they will be touching. I have not tried it with this recipe , to be clear
      But it may be worth a try. Thank you
