  • We all need a hug right now, so my cast iron cornbread recipe will deliver some homey comfort . Baked in a cast iron pan, with brown crispy edges, this cornbread has a lighter texture with the addition of whipped egg whites plus some chilies and grated cheese. FULL RECIPE BELOW.

    RECIPE: CAST IRON CORNBREAD
    2/3 cup melted unsalted butter, slightly cooled (150 ml)
    1 1/2 cups all purpose flour (375 ml)
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda (2.5 ml)
    1 tsp. kosher salt (5 ml)
    1 cup good quality medium grind or fine cornmeal (250 ml)
    3 Tbsp. sugar (45 ml)
    2 large eggs, separated
    1 1/4 cup buttermilk (300 ml)
    1/2 tsp. finely chopped Thai chili or dried flakes (2 ml)
    2 green onions, sliced
    1/2 cup shredded cheddar or gouda cheese (125 ml)
    Preheat oven to 400 D F
    Brush a 9 " cast iron or muffin tin pan with some of the melted butter .
    Meanwhile, sift together flour, baking powder, soda and salt. Stir in cornmeal and sugar.
    In a bowl, combine the yolks, buttermilk, chilies and onions. Pour half the buttermilk into dry mixture and stir well , some streaks of flour should be visible. Add the cooled butter and rest of buttermilk mixture and stir until well blended.
    Whip egg whites until soft peaks form, by hand or with mixer. Fold into corn mixture.
    Pour batter into pan or muffin tins in the bottom rack of oven for about 40-45 minutes for cast iron pan or 17-20 minutes for muffin tin, until a tooth pick comes out clean when inserted into middle.
    Cool and slice or serve. Serves 12

    Oh my goodness 💜 I'm from the south, Georgia to be specific, and I know cornbread sister. You just nailed it for me. I've never whipped the egg whites but after seeing this I am definitely going to try your way. There are two kinds of cornbread people in the south.     I actually have all the ingredients in the pantry, so it’s on our menu for Saturday. Sunday will be Greek potatoes. Thanks for keeping us positive. I’ve said it before and I’ll say it again, Christine you rock. ✌🏻

    And also ,I did your recipe about " how to cook fish (truit) in the pan! Omg! It's the best ! The fish tasted it so good, melted in mouth!it did change the way I cook fish now!Thank you Christine, you're the best!

    Christine. Beautiful cornbread recipe! I have been stocking my winter pantry and found a good source of dried green onions if I can't get fresh. Using grated cheddar and buttermilk should make for a moist cornbread. I really appreciate you posting the whole recipe, as well as other recipes, with links. The cooler weather is arriving in New Hampshire and I am in the mood to cook... I make my baking powder biscuits in a 12" cast iron pan. So I'll try this recipe! Never enough cheese Christine :-) Thank you!

    It has been a while since I made a cornbread, very similar to your recipe. Good time to do it again, I think. Really delicious with soups and stews.

    I make a similar cornbread but never thought to separate the eggs. I usually get so excited about the cornbread, I am lucky (and thankful) to get all the ingredients in and in the oven as quickly as possible.
    I also always pour the batter into a hot skillet. Seems to come out too dry in the middle otherwise.

    what a fun and wonderful recipe - my avo' used to make amazing cornbread - she would get the cast iron skillet screaming hot in the oven with pork fat in it - then pour the batter in and loved to hear the sizzle...... your kitchen reminds me of hers - fun and peaceful

    that is some great looking cornbread and I learned some from my grandmother, but still can't make it the way she did and neither could my mother. The only thing I can think it may have been was the wood stove she cooked on since I tried about everything else. Your cornbread does look great and very tasty also. If I have to stay locked down much longer my diet will be in trouble.

    HI Christine...That looks soooooo good. Do you have nice recipe for Borscht???. My favourite Aunty Mary used to make it. It was pink. Always used whipping cream in it and dill...that's all I remember except it was so yummy and pretty. Thanks for the lesson! Take care stay safe.

    I think you missed when to add in the cheese in the instructions. I missed adding it into mine but it still came out ok. Probably would been even better with cheese. I’ll have to try again.

    That’s the stiffest batter I’ve ever seen. I usually add enough buttermilk to make it like pancake batter.
