I thought SZ was just an insignificant fishing village back in the olden days before DXP economic reform. My knowledge increases whenever I watch your video.
The Haka walled houses are more like a castle without a moat. The loopholes are weapons access points for crossbows or guns. The towers on the corners are keeps to give the defenders observation and height advantage on firing down on attackers. Maybe there were a lot of bandits back then and these types of fortified houses provided defense refuges and a deterrence for potential attackers. They are not main castles though; no moat, little or no merion battlements atop walls and poricullis gate.

Actually not all words I can figure out because the way the choir sing very traditionaly, out of tempo make the words so fuzzy. Ngi you sin loi, ngai you qin a (你有一颗心来, 我有伴) Em pha san kao, sui you qin o ( 不管山有多高, 水很清 )...
Hakka dialect is unlikely to be close to Putonghua which is highly influenced and blended by nomadic dialect. The pronunciation of Putonghua is based on dialect of 滦平县,a county in Hebei Province where Manchu garrisons were stationed. Hakka dialect and other southern dialects are closer to ancient Chinese. In Putonghua, there are only four tones. In ancient Chinese, there were eight tones. Although I don't speak Hakka, I believe the dialect has more than four tones. Some of the pronunciation like ng in Hakka dialect also exist in other southern dialects such as the dialect of my home city Nanchang. I believe it also existed in ancient Chinese.
