Chicago Deep Dish: Pizza or Casserole? || Really Dough?
Вставка
- Опубліковано 10 лют 2019
- It’s one of the oldest debates. Is Chicago deep dish really a pizza? Some call it a casserole, other’s an abomination. Jon Stewart once attacked the pizza on national television claiming, "This is tomato soup in a bread bowl. This is an above ground marinara swimming pool for rats." So on this episode of Really Dough? Scott and Mark are tackling the great debate with a classic Chicago deep dish pie from Emmett’s in Manhattan. Will Mark call it a pizza? Will Mark kick Scott out?
Pizza is one of the most customizable foods in history. Tomato sauce, white sauce, artichoke cream sauce, broccoli, M&M’s, pineapple, edible 24K gold -- a pizza can be anything your heart desires. But should it? Renowned pizza nerd Scott Wiener is challenging the idea that pizza can be anything. He’s traveling all over America, spotlighting these Frankenstein pizzas and trying to make a case for whether these new customizations can, in fact, still be considered a pizza. In the end, Wiener takes these pizzas to Lucali to pass final judgment from the purist of all pizza purists, Mark Iacono, where he will either declare each slice “PIZZA!” or ask with complete disgust, “Really, dough???”

Mark's commitment to the simplicity and authenticity of 🍕 fascinates me... His dry sense of humor kills me... 👍👍
Pizza originally didn't have cheese.
wow..a true fanboy
yeah I love his humour, and also I wouldn't mind going to sleep while listening to him telling me bedtime stories with that calm voice of his
wow, really dough?
this show is fun but its useless once you realize Mark is right...
"The genus is pizza, the species is Chicago."
Okay. I accept that.
Ones a casserole
@@nateman10 Nah. It uses the same ingredients and it's been invented by Italian pizza makers. Just like livestock being bred for different things.
@@nateman10 Deep dish is descended from pizza. It may look like something else but it doesn't loose that. Just like how whales are mammals not fish. They still retain key characteristics
@@Ash_Wen-li Thats like saying that a hamburger and lasagna are the same thing when they have the same ingredients (pasta is just another kind of bread, etc)... It's just absurd.
Pizza is defined by form, not ingredients, which is why a Hawaiian pizza is more of a pizza than the deep dish monstrosity.
@@kevinbooth- You completely ignored the part where I mentioned deep dish is DESCENDED from pizza. Just like how dolphins are descended from mammals. They don't magically become something else. And it hasn't changed so far as to become something completely different. It's still crust, cheese, sauce. Just in different amounts
"Does that not look like a casserole?" "Casseroles are not round." "What are they?" "Rectangular." (Stares intensely) LOL that's just good dialogue.
It's just depends on the pan you cook it in though😂
It's more about the space between the dialogue - introverts hell and heaven.
Sounds like wannabe Seinfeld dialogue.
This show is basically a 90's porno where the sex is replaced with pizza instead.
Maybe thats why i love this series so much
100th like 😊
pizza is sex
I was wondering why my pants were getting tighter when they ate the pizza
LOOOOOOL!
Mark Lucali's accent is the most beautiful thing ever, why can't all New Yorkers talk like that
mark iacono
Nah I'm not tryna have that accent but how deep his voice is hell yeah

No, guys, it's definitely Mark Lucali. He's best friends with Frank BestPizza and Jeff Amazon
“It’s genus is Pizza, it’s species is Chicago.”

He says Scott not god.
The relationship between Scott and Mark gives me Conan and Jordan Schlansky vibes

not really

I love how Mark is always stretching out dough , even though nobody ordered pizza

Each time I watch Mark I love him more and more.
The best part is if you ever meet him in person, this is his real personality.
Mark lucali should try acting. He would be such a warm actor

He's mark iacono.. But yeah he'd be great.. Especially in mafia related movies

Scott: I don't even know anymore
Mark's jaded, worldly blue collar attitude really plays well off Scott's hyper enthusiastic, hipster manchild persona.
These two have such amazing chemistry it's actually engrossing to watch to the finish.

you got that from that buzzfeed video about the tastiest pizza i've ever had

Really looking forward to this series, Scott and Mark are hilarious together.
okay..after not seeing this series not coming back for a while, i thought that it was done. But YEAH, finally you guys came back with season 2. love it.

I’m from the Chicago land area and I gotta say I NEVER eat my deep dish with a fork and knife, i hold it with my hand. The way pizza should be eaten
People not from Chicago don't know how we eat. Lol they think we use forks
You're so right and I really hate it when people think they know us or our city
I always thought they used forks too lol
@@CookingwithVROY1790 born and raised and I don't know a single person who eats deep dish with their hands.
@@BrayBray78 we do
It is a pizza, but if someone says "hey, let's go get pizza" or "I got you a pizza" I wouldn't think of deep dish. Someone would specifically have to qualify it with "deep dish". Kind of like saying "turkey burger with cheese" instead of calling it a "cheeseburger"
Or a double cheeseburger rather than a hamburger ya fuck
You had me until you said turkey burger. Chicago deep dish is quality, legit pizza. Turkey burgers aren't burgers. They're just turkey sandwiches.
ikr the analogy is so wrong one is choice of meat while the other is shape and size
@@menacetosociety9076 Pizza is sauce and cheese on a crust. Deep dish pizza is just as much pizza as hand tossed or thin or any other kind of crust. The ingredients are exactly the same, it's just a matter of how you shape it. And really not even a significant difference. A hamburger has two components.. ground beef and bun. If it's missing one of those two ingredients, and INARGUABLY the more defining one (the beef), it's not a hamburger anymore. And if those guy argues that he said cheeseburger, cheeseburger irrefutably refers to a hamburger with cheese.
If you gave the average consumer a turkey "burger" or a veggie "burger" or whatever instead of a real hamburger when they asked for a real hamburger, there would be a problem. If the same consumer walked into a pizzeria and ordered a pepperoni pizza and got a Chicago Deep Dish, they wouldn't complain that they didn't get a pepperoni pizza. Also, a lot of restaurants will have many kinds of burger "alternatives". Most authentic pizzerias specialize in a particular crust type, whether it's classic New York style or Chicago Deep Dish or whatever. So you know when you walk in what to expect. It's a style difference, not a completely different food.
@@DeltathRiylaan Disagree. It is not only about ingredients. The term Pizza is very precisely defined by now and it is the Neaples style. It is even a UNESCO world heritage. In my opinion your example is pretty bad, especially because the Burger is not even an American creation, but in fact a German. A good example of comparison would be Champagne.
I really like the way that the final part between the two was shot film wise with the pan and the zooms. Felt very friendly.
Your editing is out of this world. I love it.
"It is pizza.... Chicago pizza" xD xD
Vast majority of us that actually live in Chicago don’t eat deep dish. Unless you have out of town friends who want the novelty. Tavern style cut in squares is the unique Chicago style. Super thin and crispy.
I hate thin pizza tho
Is it just me or is the music at 9:33 for every episode just awesome? What a series man, wow.
The editing on these videos is superb.
Scott and Mark, such an improbable yet fulfilling pairing
Emmett mentions knife and fork in Italy. Yup, for personal pies served at sit down restos. However *_pizza al taglio_* (pizza by the slice) is eaten by hand. They're on display; you order by weight; it's heated; go. Great looking deep dish but Scott needs to find Chicago "stuffed" pizza. Pretty sure we can guess how Mark would react. This series is awesome...glad it's back. 👍
I don’t really get your point. I’ve never seen Chicago deep dish sold by the slice. It’s mostly a dine in dish meant to be shared with others at the table. It seems to be just what you described
@Jacob Van Ness Yup, you missed the point indeed. It's not the fact that deep dish isn't usually sold by the slice; it's that lots of pizza in Italy is eaten *_without_* knife and fork. And I specifically said _personal_ pies denoting a smallish pizza instead of a large pizza for the entire table...so this is not similar to Chicago deep dish as you concluded. Just to be clear, at a sit-down resto in Italy, you may see three diners with three pizzas in front of them all un-sliced. Everyone is using knives and forks happily eating their own pie.
Tosh T so people eat pizza with forks and knives then? You still haven’t proven anything. Lots of pizza is eaten without forks and knives here. Lots is eaten without it there. The fact that it’s eaten with fork and knife doesn’t make it any less of a pizza.
@Jacob Van Ness Not trying to prove anything. Just following up on what Emmett said about pizza etiquette in Italy. It’s really that simple. You’re thinking too much.
@@tosht2515 I feel like you're writing about A and he understands W
5:00 haha really like the editing here. That three minutes was an eternity
Good point about the sausage. The idea of having homemade sausage rather than preprocessed sliced sausage is appealing
Love these videos. If I ever end up over there, I know where I'll be going for a slice or two
I’ve never seen a deep pan pizza that looks good before...
This looks delicious!
That's transition and the angle you are being filmed at makes this seem like a TV show

Love the editing and humor 😂🙌
Good thing there is a season 2 to this
LOVE this series. So excited to see it come back. Keep it up!
OMG finally, I was wondering when there would be new episodes! I was beginning to think that maybe it was canceled and I'm pleased to see that isn't the case. And now I'm hungry for Pizza again, even though I had some last night.
There's always tonight.
2:17 behind his left shoulders are Serbian Dinars :) that guy on 100 Serbian Dinars(blue one) is Nikola Tesla
I know, really trivial but..
'Do you have a forkin' knife?'
That's why you should say 'Knife and Fork' in that order.
Haha
Which is better ? The one that you want at the time. They're two different things containing the same basic elements.
Am I the only one who burst out laughing when Mark said "Chicago pizza" 😂😂🍕?
Just to be clear there is a difference between Chicago style deep dish and Chicago style deep dish with sauce on top ordered from a proper Chicago Pizzeria. I don't know if it's the atmospheric conditions the water from Lake Michigan or the ovens but there seems to be a difference in taste texture and sometimes even appearance. Cheers
Anyone thought of deep dish as a pie with pizza toppings instead of a pizza?
Yeah a salty pie but its delicious
Milo Didi Sure
...isn't that what all pizzas are?
@@fnjesusfreak well, deep dish literally looks like a pie and it's baked in a tin instead of a flat sheet, which pies are also baked in tins.
When I see Italian pizzas, I wouldn't think of it as pie, but deep dish has some resemblance to pies :)
That’s why people say “pizza pie”. A pizza is basically just is a savory pie.
Vietnam has one very very very weird Pizza called Pizza Tofu Bun Shrimp Sauce, try it sometimes lol

the really bad chicago style pizzas ive had were just super thick ass dough. the best ones were legit pies. several layers of toppings stacked on top of each other.
The real deal
How did I not know about this series until now?!!
This is literally the same show as The Pizza Show just with different hosts. Very original.
I literally made a weird surprised excited noise when I saw that there was a new episode of Really Dough. This show is amazing lol
Thanks Jimmy, keep spreading the love.
I'm going to have to make a point here: 90% of the time, when Chicagoans order pizza, it's thin crust, cut into squares. However, we do have excellent deep dish AND stuffed pizza. Deep dish is thicker crust, and cheese underneath, with sauce on top. Stuffed is crust over the ingredients, with sauce on top. The "Chicago Pizza is deep dish" is/was a Food Channel construction.
@@MmmBeer "They" call it "tavern style" on the Food Channel. However, of the dozens of pizza joints I've been to, including the ones that serve stuffed and deep dish (both different), all of them serve thin crust cut into squares.
@@MmmBeer Post some actual, reputable historical documentation of earlier use in St. Louis vs Chicago please, or kindly stop parroting this EVERYWHERE with absolutely no backing information.

Love Chicago deep dish pizza and I love NY pizza. I've never understood the sentiment that "NYC pizza you eat on the go. Chicago-style you have to sit down to eat." I eat deep dish on the go. If you can't, start lifting weights. You'll get there someday.
I’ve been to Chicago and New York. Both good pizzas but New York is the better pizza city. Although I enjoy Chicago pizza, New Haven pizza is generally better too overall
Chicago style is a pie a literal pie
Show at 2:44 threw me for a loop when I saw the Serbian money in the background
"New York Pizza is paper plates with pepperoni and cheese on it." That might be the real shit I've ever heard
Tomato quiche.
Pizza is cheese on toast.
Yasss! Who edited thisss? SO GOOOOD!

Killin' it!!
What makes Mark so cool is his relaxed speaking. Listening to him talk is basically the opposite of this video. This video is like walking into a CiCi's pizza.
I go nuts over that McIntosh MAC4100 receiver every time I see it.
Good pizza is good pizza. I'm from NY, so I'm kind of a snob. But I've found good pizza in a few states at least on the east coast and mid-west. Never on the west coast. I wish there was some places in NY that served some quality deep dish chicago style pizza or bar style thin pizza, or some detroit style even here.
will how would you describe a good pizza?
@@majopuerta It tastes good? lol It comes down to quality of ingredients and the mineral composition of the water, which is used to makes the dough. Any idiot can make a decent pizza with quality ingredients.
