- Mark Iacono is well known for his crispy pizza at his famed Brooklyn pizzeria. He has lines out the door before the restaurant opens for service every day of the week. But few people know that he also makes some very tasty meatballs. And even fewer people know you can order the meatballs on pizza. So on this week’s episode, Scott ventures to the Lower East Side to taste a meatball trapizzino with Stefano Callegari at Trapizzino. He may even bring a trapizzino back for Mark to try. But will this trapizzino push Mark too far? Does Scott even think this is pizza? Will Mark kick Scott out?
Pizza is one of the most customizable foods in history. Tomato sauce, white sauce, artichoke cream sauce, broccoli, M&M’s, pineapple, edible 24K gold -- a pizza can be anything your heart desires. But should it? Renowned pizza nerd Scott Wiener is challenging the idea that pizza can be anything. He’s traveling all over America, spotlighting these Frankenstein pizzas and trying to make a case for whether these new customizations can, in fact, still be considered a pizza. In the end, Wiener takes these pizzas to Lucali to pass final judgment from the purist of all pizza purists, Mark Iacono, where he will either declare each slice “PIZZA!” or ask with complete disgust, “Really, dough?”

Luty Angeles Most people are confused when we (italians) talk about Neapolitan's pizza and other regions pizza.. In America (and in the rest of the world, pretty much) Naples's pizza is known as the only we made in Italy; That is incorrect: You have to understand that Italy is a country that was divided until 1862.. Divided also culturally. So in Rome there's a concept of how you make/and call a pizza (Traditionally speaking, the pita):
It's more crunchy and it's thin. Also, in Rome is quite common to eat pizza bianca (without anything on) ; that is what in Naples people would call "focaccia", because the dough is taller than usuaI. It's not bread, it's still pizza. What changes is the way you call it, and sometimes even the way you make it. So, The Trapizzino is a fold made out of pizza. 😉

@@MMarko94r There are thicker-crust pizzas popular in parts of the Eastern US that have large Italian-American populations. They call it Sicilian-pizza because it evolved from a style of pizza brought to America by Sicilian immigrants.
There's also something Italian-Americans call tomato pie (not to be confused with a different food with the same name popular in Southern States), which is basically just foccacia topped with tomato sauce. Sometimes it has romano cheese sprinkled on top. It's typically allowed to cool and eaten at room temperature or reheated.

Props for the chef for doing the elbow greeting. I've always watched in horror how all the chefs shake hands with Scott when he comes in. Some even handling the dought or something right after that.

Not gonna lie, it took me a few episodes to start to appreciate this show, specifically Scott's penchant for semantics. I'm glad I stuck with it because it really showcases some awesome restaurants/chefs who have unique twists on the classics. Plus Mark and Scott's chemistry is spot on. For as much as Scott seems to drive Mark nuts with semantics, you can tell he's having a blast.
The next time I take a trip to New York, I need to try to get some food from Mark's restaurant(I have some friends who have been there and they say it is damn near a religious experience, it's that good.), but I will DEFINITELY be going to get some Trapizzino. The owners smile and good nature was infectious and warmed my heart(Plus, it looked DELICIOUS.)

I take back last week's comment. This is by far the best episode of this series thus far.
Been watching Mark on multiple channels for a few years now and he's always crazy entertaining and hilarious! Really Dough is quickly becoming one of my favorite segments on YT. Been a dream of mine to finally make my way over to NY and go on over to Lucali and finally try what I've heard about for years as one of if not THE best pizza in NY.
