Why start from scratch if you don't really need to anymore, unless you're going for full character customization starting as this person has done.

Put it short, this's a timelapse speedup video and nobody even pro 3d artist could done this in 1 minutes. Nobody. You might be able model faster than the author in realife modeling, but to say model quicker than this video is just lead to misunderstanding for typical audience (because clearly the user who made the original comment about how quick it was, was totally a outsider, he took this as if it was the real time speed of modeling in daily life of a pro which is not true at all).

This is a new technique I haven't seen before, but I really like it! It keeps control of Topology and Shape at the same time, love that! I'm totally gonna study this workflow!

Modeling is when you use polygons to create your model (like shown in this video). Sculpting is more organic and works more like shaping clay rather than geometrical shapes.
Beautiful. I aspire to do so well someday. I love modeling faces and this was a great inspiration. I still have to work on texturing, rigging, and hair; well, back to my tutorials! Thanks for the thrill!
