A Small Suggestion ... Instead of Using the Whole egg together, Why not Add the add the Yolks to the Mixture first and then beat in the Egg whites until peak.... and then Fold in the Mixture so that Airy cake can be made as good as the Siphon one. and also adding the Melted butter at the last wud give the mixture a smoother look and finish
This works actually. I got a message from one of my chefs who used to use this recipe and they said theyve started whipping the whites so defo try that out!

Dear chef, great video and worthy reccommandation baking it as a cookie. I'd like to serve this with beet fluid, some krusty chips of sweet potatoe and a carrot icecream. I guess this might be a nice variation of colour and texture. What do you think?
when i first tried sponge cake i had it Ukraine. at first i thought i was just for decoration but then i realize it was edible and i love it. i love sponge cake it beautiful way to decorate for family and friend or a romantic dinner
Can you try some vegan cakes and test which one is best? I'm trying this vegan thing out, but I love baking and it is really difficult to find recipes for vegan cakes that taste (almost) as good as the ones with eggs.

Agreed. Micro sponge can create eye catching textures, they go tough extremely fast and usually taste insipid.
Try with bicarbonate
