  • The main quality of this type of sponge is that it results in a very airy, light and delicate sponge cake yet flavorful
    This is ideal to use in the pastry industry in the assembly of desserts or as a final touch in decoration of certain cakes or pastries, it adds elegance to your pastries.
    Once cooked, it can be frozen and used when necessary.
    INGREDIENTS:
    ICING SUGAR 110 GR
    ALMOND POW 80 GR
    EGG WHITES 170 GR
    EGG YOKL 40 GR
    CORN OIL 30 GR
    FLOUR 40 GR
    VANILLA ESSENCE 10 GR
    SALT 2 GR

    Hi ..looks Great i will give a try ..but i was wondering something .. because i haven't use cifon ever ..so .. when y use the capsule do you shake the bottle ( cifon) before you add the sponge in the cups ? Thank you !

    This looks great! For the matcha sponge, do you just switch out the vanilla for 10g of matcha tea or do you just add som matcha powder?

      Hi David, for the Matcha im using the same recipe. Replace it with 5-10gr Matcha power or any flavor you preferred.
      Just make sure to combine first the matcha powder and sugar to avoid lumps.

    Bisakah diskip almond powdernya?bisakah membuatnya dengan bahan dan alat yg sederhana

      Hi chilla. Unfortunately Almond powder the the main ingredient of this recipe.
      And espuma is necessary to add more air in the sponge.
