I’m so glad I found this video. I just made the same “mistake” on the dough last night and bake it this morning it came out perfectly!! Crispy on the outside and very soft in the inside. I’m a newbie on baking, I’ve mixed bread flour and AFP as I ran out of bread flour. It was my 2nd time to bake focaccia bread and I love how it came out. I thought I needed to create another dough as it was really gooey. My focaccia had lots of big bubbles as well, literally no knead/no touch. Thank you for this video, such a life saver 😊💕

If you top it with heavier ingredients (tomatoes, olives, cheese) does it increase the baking time? Do you lightly press them in or just rest on top? Thank you! Hoping to try this tomorrow!!
This foccacia recipe is amazing! Only question I have is, what is the best method of storing it? I just wrapped it up in parchment paper thinking that would preserve the crispness but it did not. I made this today, and it was very easy to put together, I have no problem with that. I decided to sprinkle garlic powder in the bottom of my pan with some olive oil just to give it a more garlicky flavor, big mistake! It had a really good flavor, but it also stuck to the pan so bad that I could not get it out. I'm not giving up. I'm going to make it again tomorrow or the next day, but without putting the garlic powder in the pan.
I've seen many dough recipes where they used a cloth over the dough instead of plastic wrap, so I think this allows the dough to breathe. Leaving sides open with plastic wrap also allows the dough to breathe. Also because the dough expands, it pushes some of the air out of the container and the air needs to escape, not be pressurized in a sealed container. Or else you'll have the situation like opening a can of biscuit dough -- BOOM! lol As for proofing in the oven, I imagine the oven was on a very low temperature. If you look on yeast packet instructions, they often say that the yeast likes warmer temperatures to work faster than at regular room temperature. I think this was what was going on in the oven, but I don't think a warm oven is required for all bread recipes, you can just let it sit a room temperature for a longer time.
I finally bought a quarter sheet pan just to try this recipe. I suppose I could have doubled the recipe but it gave me the excuse I needed to buy one that was on sale! 🤣😉
I wonder how whole wheat flour would go? I trued using Allulose instead of sugar and it worked wonderful in baking. I like to experiment. Easy is good.

The oven light is often on to proof the dough in your oven if your kitchen is a bit cooler. Works great!😊
