How to Steam Milk on the Delonghi Dedica Arte EC885

  • In this video, we look at how to steam silky, creamy milk on the Delonghi Dedica Arte EC885. While the steam wand is a nice upgrade over previous models, steam wand placement is key - both vertically (tip depth), and horizontally (tip proximity to the side wall). This machine does not have a ton of steam power at first, so the tip has to be just AT the milk surface, not below it. Also, one has to keep the tip close to the side wall of the milk can, to get a swirl going. Finally, keep your hands steady, once you find a good position! Using milk with more fat content will lead to good steaming, as will using homogenized fresh milk.

    Thanks Tom.. I have not been able to get good foam quantity following other tutorials recommending dipping the steam wand tip deep after 5 seconds of injecting air.. but as you said the dedica has low steam pressure, I followed your technique of dipping the wand deep after 45 seconds and it worked! I got silky foamy milk!

      I have the same issue all tutorials I was watching were with professional machines and 3-5 seconds of air injection before dipping deep. This makes sense though, I will try it out!

    Love your no nonsense no fluff videos. I prefer to forgo the fine art and have my coffee have more foam. I can mess with the flavor experience by how I incorporate the crema, coffee, and foam. For example, I can have a swirl of crema at the surface of the cup for a strong coffee hit at first sip, or I can incorporate the coffee into a foam and then add a more dense milk for a milder hit, or I can incorporate the coffee into the milk and then have a foam on the top with a little coffee incorporated for the mildest first sip. What I never do is the abortion of a Starbucks style cappuccino.

      Hi Tom! Thanks for sharing - I do the same thing. Sometimes I drown the milk under the crema to provide a really intense taste up top. It's delightful. And yes, Starbucks does not know how to make a cappuccino.🤷🏼‍♂️

    Great video, I haven’t steamed milk until today for a good while. I had to reattach the steam water pipe after a blockage popped it off of the valve.
    A good reference video. Nice to see the proper time it takes with the power of the machine.

    Don’t forget to purge immediately after steaming.
    I like to keep the lip of the jug touching the spout the whole time to give more control. Easier to slide jug up and down on the spout to adjust depth.

    Im a newbie on late art, bought a 885 2 weeks ago and I'm still struggling with steaming..a lot of times I only get a foam layer on top of the hot milk (im using the delonghi pitcher that came with the machine)...slowly I'l get there :D

      The key is to pay attention to the sound and be very still during the process. Can you hear that sound like tearing paper? That's the wand injecting air into the milk, hold it there for a few seconds. Once you've created enough foam you can put the wand a bit deeper in the pitcher so it breaks all the big bubbles and creates the silky microfoam you're looking for. All it takes is a bit of practice, but tutorials like this one Tom did can be very helpful. 😊

      @@peters1821 You're more than welcome! And don't forget to create the vortex and make the milk spin as Tom said. To achieve that don't put the tip of the wand in the middle of the pitcher, but move it a bit to one of the sides (the one you like more, both will do actually). =)

    It’s taken me 6+ months to get the hang of this! I have a larger steam jug & find having the wand hanging from the counter gives more room to manipulate the jug for better foam. Maybe I won’t sell the arte after all 😅

    Hello Tom! Thanks to your videos I went ahead and got myself the Dedica arte paired with the Kingrinder K2 and yum! I also found out that with the Motta 350ml pitcher (as in your video) I get much better results than the original shipped with the Arte.
    But now I have a problem. I have the IMS double basket (i use 14g) and I like drinking coffee so I drink about 3 maybe even 4 cappuccinos or so during the day. I found out that after the 3rd or so maybe the caffeine kicks in because i start feeling my veins in my head pumping a bit. So i have some options:
    1. Use same basket and fill it less like 10g or so and grind finer so extraction time isn't much smaller cause of less resistance
    2. Just make double shots and split it, and whenever I want another coffee, warm the 2nd shot in the microwave a bit (in low setting so taste isn't lost)
    3. Get a single basket and just pull single shots
    Which one do you think is best option?

      Well, single baskets are hard to come by, and more difficult for puck prep. I'd just split the shot into two then, and save one for an Americano later, for example. Or an iced latte.

      @@decibeldragon1 Yep, I use the portafilter from Delonghi and I just did the portafilter ''hack'' with the saw that you just cut the bottom for a bottomless portafilter. Tom has a video doing the hack on his channel too!

    i cant quite figure out what im doing wrong with my ec885. I think the steam milk texture looks okay but when i go to make art the foam art doesn't push itself out of its own way and ends up looking like a blob. like if you were going to make 3 blobs, the first blobs never gets pushed towards the back when i pour the second so they all join into the same mess.

      It takes a lot of practice to get just the right milk consistency. I'd suggest Lance Hedrick and Emilee Bryant's channels for better tutorials on this matter. Cheers!

    Прн Том!! Пожалуйста ответь! Может в новых партиях дедика 885 все впорядке с паром? Дело в том, взбивал как ты на видео ( молоко из холодильника). За 60 секунд сильно перегрелось! Как проверить силу пара? Может они уже исправили?

      I would upgrade to one of these. It's easy, cheap and fast. And it produces far superior microfoam than the pannarello. Very useful if, like me, you lack the necessary skills to disassemble the machine and install a new wand. 😂

    Hi Tom, quick question: to your knowledge, is it possible to install the EC885M’s steam wand on the EC685M? I realiza that the EC885M steam wand has a thinner hose, so maybe the installation would require to adapt the EC685M original hose to the new wand (both seem to have the same white plastic nut piece). Would really appreciate your feedback, since I already ordered the new steam wand to modify my EC685M.

    when i steam milk with 1 hole nozzle delonghi. milk and foam get separated ? even i vortex still its seperate . i stop adding bubbles at 37celcius

Yes, I do use barista kind - my fav is MOMA Barista, it's just I'm lacking steaming skills at the moment (all new to me!) and, after my attempts, that oat 'milk' doesn't taste as well as when I was just vigorously shaking the box 🤣 So was just wondering if there are other tips and advice for steaming plant based 'milk' .       I managed to get best barista results with the oatly barista. Its quite expensive but is also what's used in most cafés in Germany. If you're located in Asia, check out the singapurean brand "oatside", that one is also really good (maybe even better than oatly)

    Hi Tom. Thanks to you I bought this machine a year ago. I find that the steam wand is incredibly inconsistent. Sometimes it steams beautifully and sometimes it doesn't. I see it having power fluctuations, as in sometimes I have a lot a steam pressure, and sometimes barely any. Do you think I need to service my machine?

    What am i doing wrong?! I get foam but its frothy/airy rather than velvety. I have a smaller jug 350ml, would this make a difference as the milk gets hot quicker hence less time to combine? Ive tried longer and shorter aeration but its still not velvety. Been trying for ages

      I don't think so, but you can upgrade the wand of your Dedica in a few seconds for around 5 bucks and without disassembling the machine. Just plug and play. And it produce results as good as the wand of the 885, if not better. Check it out.

      Oat milk is certainly harder, you have to spend more time injecting air. Even then, it can fall flat afterwards. But they make a 'barista' version you can try. Cheers!

      There is special oat milk for latte art. And yes, the technique is the same. Just bear in mind you won't get foam from every oat/soy milk.

    Hi Tom! Hope you can help me with a couple other questions regarding this machine. I’m a total beginner so I’m sorry if they’re stupid questions.
    What ground coffee do you recommend to get a good crema on the shot of coffee? I don’t seem to be getting any. (I’m in the UK so anything you recommend that I can get my hand on)
    Also , after doing the coffee shot and steaming the milk, the buttons with both the ‘coffee shot logos’ flash and don’t stop. I have to turn the machine off and on again to make another coffee. Is this normal?
    I only got the machine today so hoping I can figure it out as time goes on , but also hoping for some advice.

      Hi Hannah, do you have a grinder? Ideally, you want to grind your own beans, and they should be freshly roasted. That will give a much better aroma and crema, too.
      After steaming, you have to manually cool down the thermoblock by going back to coffee mode, and opening the water spout on the side. That will run water through the thermoblock to cool it. Good luck! Tom

    Hi Tom would you recommend swapping the tip to a 3 hole one I've read about? Would it make frothing the milk easier/ better?

      No, I don't think so. It wouldn't in my estimation have enough power for 3 holes.

    Thanks for the video! I just got the ec885..I am practicing following the tutorial. But I found that the sound when steaming the milk is really harsh... I wonder if there's anything I did wrong?

      Try not to steam milk too close to the metal sides of the pitcher - then it shouldn't screech. Cheers!

    Hey Tom, question regarding overheating. After I press the steam button and the light stops flashing, I usually have like 30 seconds to start frothing or the dedica overheats, and if I try to steam after the shot buttons flash, the wand loses pressure and cuts off. Is this normal? It's really annoying. Thanks!

      You have to start steaming within that timeout, otherwise the machine defaults back to coffee mode. You could just press the steam button again though.

      @@TomsCoffeeCorner I'm not quite sure if what's going on is normal then. It dosent just switch back to espresso mode, rather overheating and not letting me pull another shot until purged. But if I don't purge and rather try to steam milk like that, the steam will stall quickly. Any advice? The time between the steam light indicating its ready and the device overheating seems arbitrary, but would be ~30sec

      @@edwinchua941 hey! Found a fix.
      1. Heat the steam wand until wand light stops flashing
      2. Press either espresso button, open up steam wand until completely purged and its only pumping out hot water, once you close the steam wand the espresso buttons shouldn't be flashing. This preheats the wand.
      3. Press steam button again, once light stops flashing, purge til only steam is coming out, close wand, ready your milk jug and steam.
      This fixed it for me, it seems like alot of work but it only takes an extra minute or so. So much more consistency, also remember to take your milk out of the fridge at the start of your whole coffee making process to give it time to warm slightly

    Great video! Unfortunately, my Dedica Arte sometimes justs stops frothing. I go into steaming mode, start frothing - everything works. Suddenly, it stops, the machine starts pulsating and ends up being in normal "espresso mode" again. Any ideas what I'm doing wrong? Still have warranty but I'd prefer to keep it ^^

      This has happened to me on occasion, that it goes back to coffee mode - not sure why. I just press the steam button again, to put it back into steam mode. Cheers!

    Guten Morgen, Tom.. Was that your first coffee of the day? I have the Dedica Deluxe and find that I can get pretty good steam out of it with the panarello (?) removed and just using the underlying rubber wand ( old school!) In your opinion, how does the Arte stack up to the older Deluxe model in the steam output. To me , the Arte steam wand seems too long and awkward to use when I have checked it out on display in a shop ( not having actually used one) It seems not to be very articulated; this is the same complaint that I have with the Bambino Plus steam wand for manual steaming use.

      Moin Chrys! The black rubber nozzle works great, too. I do find I can get slightly silkier milk with the Arte steam wand though. But yes, it's a bit too long. Schoenen Gruss!

      You can try this for only a few bucks, it's shorter than the wand of the EC885 and produce similar results. And yes, I agree, the one of the Arte is a bit too long for my liking.

      Yes you can, you just have to remove the panarello.

    Thanks for sharing. I have both Dedica ec685 and ec885. I find that the steam pressure from ec685 is more powerful and easier to do latte art. Do you think there is more steam pressure on ec685 or the steam wand is too long on ec885 which cause a weaker steam pressure?

      They are the same, it's just that the steam hole tip on the EC885 is a little smaller I think, constricting the flow. I can get silkier milk on the 885 though.

    Does this machine take 18 gramms of coffee ? If not which machines take up to 18 or more gramms of coffee ???

      It can do about 16-18 grams in, and whatever ratio you want out. But you'll need an aftermarket basket like the IMS H26 for that. The OEM baskets don't fit that much.

      Well it's better and it's a non burn steam wand, but it doesn't have more pressure. Of the 3 listed, the ECP 3420 has the best pressure.

      Hmm, that's going to be hard. Oat milk just doesn't coagulate like dairy milk. I recently did make a video with the ECP machine, but not with the Dedica. Perhaps I will have to try that. You need a lot more power to do Oat milk in my opinion.

      Of course, as long as it is oat milk that can be frothed. Not every vegetable milk allows for that, unfortunately, but there are definitely many you can frothed just like regular milk. I've been doing it for quite some time with oat and soy milk. But again, bear in mind not every veggetable milk will work, in fact some will go to waste if you try to foam them. But you will find other you can foam 100% no problem. They usually sell as "Barista", show a pic of a cappuccino on the box or something like that, but others don't advertise it in any way but still are very good to get microfoam from. It's a bit try and error I'm afraid. I usually buy only one brick of the milk I'm interested in and try if I can get foam, if I can I buy more.

      Hi guys, thank you for your answers, I’ve just seen them. So for you to know, I have been able to steam oat milk with the dedica arte. Still, I miss a bit of power and I’m not good at making latte art but the cream is very good. I am using oat ly and another Spanish brand and both are nice.

    Mine is brand new and steaming is breaking up I don’t know what’s the problem once I press steam button it keeps flashing for 10 seconds and when it stops the other two buttons start flashing immediately and it never stops on steam button just like your video .. can you please tell me what shall I do? 😿💔

    Hi Tom is this steam wand version low power? I was looking to buy EC135BK with the same steam wand my main goal is to get better microfoamed milk is it possible with this machine or is it waste of money and time. Also most brands don’t share steam pressure/power data

      It's possible to get nice silky milk, as you see in the video. But I'll admit that the steam power is a bit lacking. Bambino Plus would be better in that department.

      Hi there! They have the same thermoblock as far as I can tell, so I think the power is the same. It's just that the steam wand design is different though, which does affect how the power is released.

      It's 350ml or 400ml, I don't quite remember. Yes, it takes about 50-60 seconds to steam to temp. Cheers!

    I know this is the steaming milk tutorial but does anyone know what size grind I should use with the Breville coffee grinder pro? I use a 12 and I’ve also added a new screen per your recommendation. I’m also using a 3 bomber screen puck because they say it stops the spraying but it still sprays and it seems there is still residual water sitting on top when espresso is done and there is little to no crema
    Suggestions?

      I use the inner collar at 3, and the outer dial adjustment around 7-10.

    885 has PID, maybe thats why it gets a weaker steam

      I'm not sure it really has a thermoprobe for the PID. The new EC900 and EC950 do however.

      @@TomsCoffeeCorner Thanks, I said this because I found a thermoprobe at the outlet of the thermoblock. I think the logic behind is that 885 does not have a solenoid valve, so the program can not set up a more higher steaming temperature like banbino does, otherwise when steaming milk finish, thermoblock in 885 glows without solenoid valve to cool down, that is quite easy to cause some heat damage.

      Make sure it's still in steam mode. It reverts after 10 seconds back to coffee mode if you don't start.
