Just got my Carey and canning chicken for the first time. It went from E10 to E5, and that was the lowest E#. After running for 42 minutes, I figured I'd better switch it over to Airtight valve. Not sure if I did it correctly as it never got to E0 like the instructions. The noise it is making is so loud. 21 minutes left to go. confused
@@grantleon6736 that does sound really strange! I've never had that happen. I definitely recommend calling support when something is so different from how the manual says. In terms of noise, it does keep letting off steam even when airtight, to help keep the pressure regulated. So that is probably okay, but I'm not sure about the E thing.
For a single person and small garden, this is a heaven sent canner. I'm making my first batch of cold pack tomatoes... Soon after this, I am going to try canning hamburger. Happy and healthy canning!😋
I agree 100%. I really love small batch canning. In addition to being good for people with small gardens, it's also good for those who have small pantries. I simple don't have anywhere to put a dozen or so jars of one item, unless I want to eat it frequently. It works much better for me to can a little bit at a time, and the Nesco makes it so easy!
I purchased this canner and absolutely love it! I prefer it to my All American Canner now … for the reasons you mentioned! It takes away the stress of timing the jiggler.
Jane, I've never had an All American, and I'm happy to hear you love this canner more! I do like this one a whole lot better than my Presto stovetop canner.
My All American is in my garage, along with my big kettle I use for water bath canning. Now that I am living alone, the thought of dragging all that equipment out discourages me from canning. This appliance seems so much more practical for me.
@@wendyellis6402 I agree. I stuck my Presto stovetop in the shed. I wasn't ready to get rid of it, because I never know when I may need it. It's good to have "just in case." But I'm in a season in life where small batch canning works best for me anyway, and the Nesco/Carey make it so easy. I can a lot more since I got it, because it really reduced the overwhelm.

LoL I've always been afraid of pressure canning, and tbh I wasn't fond of the old way, but felt I needed to start there and gain respect and knowledge before moving onto a digital one. Plus, if we ever lose power for some reason, it's nice to have those older style ones and KNOW how to use them.😁

I think it's great that you started with stovetop canners. I have a Presto stovetop canner, and I'm glad I do. Now mind you, I put it out in my shed, but it's there if I ever need it. :) I can't wait to hear how you like the BBQ chicken. I love having it on hand, because it makes great sandwiches. Just don't drain the juice when you put it in the skillet. That has great flavor, and as you simmer it and shred the chicken, it will absorb all of the juice. It's become one of my favorite quick meals. And by the way, thanks for telling me I've been a blessing. That blessed me, so you see, you also have been a blessing!

I'm sure she will reply but maybe I can help you with your question in the meantime. After the chicken was taken out of the canner you let your jars set untouched (unless you are using Tattler lids and if you are it has a tightening process for Tattler ONLY)
After your jars have set and cooled for at least 12 - 24 hours you remove the rings and wipe or wash your jars but first, you lift the jar by the lid after removing the ring. Be careful because if it has not been sealed it can drop so do this over a counter or table. If the jar has been sealed it will not release and it is safe for cleaning and then set in your pantry. If the lid comes off then put the ring back on and store it in the fridge and use or you can re-can it with another batch I would change the ingredients to another jar and new lid and ring if reprocessed.

I know this was a year ago, but I got the Carey, and they changed it in the book. Says to switch to air tight when it hits E0 now.

Yes! 75 minutes for pints, 90 minutes for quarts.

Do I have to heat jars when using cold precooked meat.
I've don't typically can precooked meat, so can't really advise you on that. I'm thinking with precooked meat, you would add some liquid. It would make sense to use hot liquid, and hot jars to if nothing else, reduce the time it takes for the canner to get up to pressure. You can also heat the meat before adding it to the jar. The colder the ingredients/jars, the longer it will take for things to get going.
Do you use either of the disc's that came with the canner for the bottom or just put jars on bottom it's self
Yes, you ALWAYS use a disk or canner rack in the bottom you never want your jars to set on the bottom of your canner stove top or electric. Hope this helps
I am going to get this model.just been watching videos comparing.i have some crawl space repair needed .then I will make space in my house for glass jars. Lordy I am clumsy with glass jars ,cooking and washing) but....I will do this
You can definitely do it! I'm clumsy, too. You can always put a towel down on the counter or wherever you're working so if a jar slips, you're less likely to break it.
May I add bay leaf to chicken and other spices?
yes, adding spices, including a bay leaf is fine.
We are 955’ elevation feet in Lexington ky, which should I use?
Technically the black one, but since you are borderline when it comes to altitude, either should work. I'd use the black one, but if you happened to lose it or something, then I'd switch to the green one.
I just got my Nesco canner and I’ve done everything I needed to but is the green pressure limiting valve suppose to have so much steam coming out of it . Very strong stream of steam. It’s counting down no error just can’t find if this is normal and ok. Any help would help this nervous old lady.🙂
Hi Teresa, great question! There can still be a lot of steam even after switching to air tight. This enables it to maintain the proper amount of pressure. So from one old lady to another, you're doing great!

I have some pint and have canning jars, can they fit in the nesco?
Both pints and quarts fit in the Nesco. Quarts are too tall to use the water bath function, but you can use the low-pressure button if you want to do water bath recipes in quarts. You can pressure can in everything from quarts on down.

I like your idea of doing multiple flavors, it is just me and hubby so having different flavors is something of keen interest. Chicken Teriaki….wow! Will adding sugar or honey make a difference. Your chicken looks so good!. An Indian chicken salad sandwich….how about the recipe for that?
I haven't tried sugar or honey, so I can't say for sure. I have use bottled teriyaki, and that turned out really well. Re: Indian chicken sandwich - it's just cooked chicken, jalapeno (seed if desired), cilantro, garlic, salt and pepper, and mayo. I don't really measure, but it seems to always turn out well. :)
TFS, I have used my Nesco 1 time. when I tried ,it started the E10 countdown then at E6 it started the running cycle again, I got scared and stopped it. started again when it cooled and it worked fine. should I have left it to see if it was going to 75 countdown? has this ever happened to anyone else?
Sometimes it does skip so it was totally fine to have let it go. But starting over again like you did is also fine - but not necessary in the future. The difference between the Nesco canner and a stove top canner is that the Nesco is "smart" meaning it adjusts based on things like temperature and pressure. In contrast, with a stovetop canner, you really have to let it vent the whole 10 minutes. I know it can be nerve wracking when you first start, but it sounds like you are doing great!
thanks for answering I used my Nesco for the 2nd time today and it did the same, I left it on and it went to the 75 minute countdown. waiting for the cool down I have 3 pints of Italian sausage and 2 chicken. TFS@@StockingMyPantry

New at this whole thing. We raise our own turkeys and chickens and we want to can some. Are turkey done the same way and for the same amount of time and also is there any difference in time for canning dark meat?

yes, that's normal! It keeps the pressure regulated. Just make sure you've switched it to airtight after the countdown timer goes to 0.

Good info. Mine doesn’t run the circle after the E10 to E0. It goes immediately to 75. In fact, sometimes it goes to E6 then beeps and next it’s 75.

The last time I used my canner.....I pressed pressure cook/high/time , I notice you just hit the high then time. Will pressing the pressure can first make it so its not using the canning function? It went through all the motions...counting down the E10 ect. Just wondering if I screwed up my batch by hitting the pressure cook button.

This "Pressure Cook" button vs. NO button for "Pressure Can" is confusing indeed! To pressure can, you just select "High"

Thank you! I may indeed do stew meat, but I'm not too big of a fan of salmon. The good news is, I'm pretty sure that RoseRed Homestead has a video where she cans salmon, though I don't think she used a Nesco for it.
Just a little tip when raw packing chicken, if you put just a small amount of water in your jar, say 1/2 c or less you will not have any meat outside of the liquid when done. I prefer that look especially when exposed meat turns a darker color on the shelf. Of course it’s still safe to eat , I just don’t care for the look.

Donna, thanks for the tip! I found when I filled the jar with chicken, then there was enough liquid, but on jars that weren't as full, there was a bit sticking up above the liquid. I had one jar in particular where some chicken was above the liquid. Even though I knew it was okay, I decided to open and dehydrate that jar of chicken (video coming soon!). I just picked up more chicken today, and will definitely add some water in, especially on jars that aren't as full as I'd like.
So just to be clear, after this process is done, is the chicken then fully edible as is? Or do you have to cook it?
Great question! Yes, it is fully cooked! And delicious! So it's a great thing to have in your pantry for a quick and easy meal.
How do you know how much water to add to the canner? My manual says 6 cups. I want to do 24oz Jars. How much time should I use? Thank you. 😊
The original manual I think says 4 cups but I keep seeing people say to now do 8 cups. I think they did an update bc they discovered during the pressure canning process too much water exhausted out of the canner.
HELP I was just doing chicken in my Nesco canner and the power flickered and canner went off with 12 minutes left! I haven’t touched it….letting it do the natural,pressure release. But what can I do with it not having the full 75 minutes? Any guidance is much appreciated. Thank you
Oh my, I'm sorry that I'm just now seeing this. If that happened to me, I would reprocess. They will be REALLY cooked, but with chicken, that won't hurt. I hope this worked out okay for you.

I did push the pressure button, though it's possible that for some reason that wasn't recorded. I think you'll love this canner for canning meat!
There is no "Pressure Canning" button on the Nesco Smart Electric Canner. Instead, you order "High" for pressure canning. My hubby asked the same question until I actually read that center button which says "Pressure Cook". It's for pressure cooking, not canning. Hope this helps!

Is there such a thing as too much headsoace?
Great question - Yes! Too much headspace can result in a weaker seal. I ended up deciding to open one with too much headspace a couple of weeks after canning it, to dehydrate the chicken. I wanted to use that jar sooner rather than later. That video will be in a couple of weeks. :)

The E10 countdown is the 10 minutes of exhausting all of the air out of the canner so that is filled with steam. There is no pressure build-up during the E10 cycle just the heating to get the air out and replacing it with steam.
Yes, it's the same basic function as leaving the weight off on a stove top pressure canner for 10 minutes after you first see a stream of steam. Thanks for commenting, Randy!
I keep looking at the scanning machine I want to buy it but I am afraid because of reviews stating that there is no way that it cannot get up to the 240 lb pressure that is needed to make the food you are canning safe to eat Anyone owning this product have they had this issue?
That's a great question. I recommend watching some videos by Rose Red Homestead. She has at least one video where she tests this canner out and shares the results.
I just got one and did my first batch of butter in it. Did great. Does your unit vent while it’s working. Mine vents a little the whole time it’s working.
Yes, venting is normal during the whole process. It is regulating the pressure and is nothing to worry about.
After the E10 countdown E0 and you switch the canner to airtight then it starts building up pressure in the canner and once the canner gets to the right pressure it starts the 75 minute countdown.
i just got a nesco. i have had 2 fails canning green chicken chili. each time i get a fail at 60 minutes in to my 90 minutes. i Get a series of a lot of beeps and EEE.
i have checked everything i can think of and just don’t know… i’m ready to return it… so disappointed… any thoughts what i can try?

Great question! It seems like for awhile, the Nesco has been out of stock. The Carey, which is the exact same canner is available here: amzn.to/3p8eFL5. I'm not sure what is causing the shortage right now, but I suppose it has to do with supply chain issues coupled with people feeling motivated to can to put food aside before it gets more expensive. Hopefully things will ease up soon!

You never used the pressure button . Is that correct?
Yes, you do use the HIGH pressure button.

The price of canners are nearly the price of a new dishwasher. My bell peppers are getting red. I wanted to can roasted peppers. I thought electric canners were a set it and forget it but not so much. The reason you have to unplug the canner is because electricity still runs through appliance and everywhere the electrical cord runs through every room in the house. Not only in the wire but outside the wires. It is considered safe because it is not a fire hazard. The same goes for the electrical wires on the poles outside everywhere. I don't buy solar because of the wasted energy it takes to produce and they all have a shelf life.
If someone would run a copper wire to the top of a sail on a sail boat they would collect electricity to power a battery or run a radio. It's naturally in the air. Safe for all to use. Free.
Thanks for your great comment. They are definitely set it and forget it compared to stove top, but the first part, until you switch to airtight, you have to pay attention. Thanks for the explanation about unplugging it. It makes sense!
So you warmed the jars and used hot water in canned, but filled jars with cold chicken? I always start with cold raw pack meat, cold jars, cold water in canner and bring it up slowly to prevent thermal shock. To be safe your chicken should have been cold. Room temperature raw chicken is not a good thing. Also you were careful about head space and de-bubbling but then shifted around amounts of chicken because you didn’t have an even amount to perfectly fill all jars. So what was the point of being careful with your headspace and de-bubbling? My answer to this for me is I no longer worry about being on with the headspace.
honestly... since then having stock pantry.... i had to rotate food either...lol
It's easy to fall behind with rotating, for sure! I'm getting better at it, but it can be hard to keep up with.

vinegar can make them not seal. after wiping down with vinegar, dip cloth into hot water and wipe the rim off again.
Great tip, thank you! Up to this point, I've been using vinegar always, and seldom have a jar not seal. Perhaps it's because I don't have the towel sopping wet with vinegar. Regardless, I appreciate the tip because I like to take every precaution possible when it comes to canning. We put too much work and $$ into what we do to have lids come unsealed!
