I will have to try this recipe because I love dill pickles. 👍🏻👍🏻 On another note, last week while canning cherries, one of the jars took a really long time for the lid bubble thing to go down to the "sealed" position. After waiting at least 12 hours, like you recommend, I tested the lids to make sure I could not lift them with my fingertips, and the jar that look long was not actually sealed and I was able to gently pry the lid off by hand. That taught me to always check even when the bubble is down. Needless to say, that jar of cherries was deposited into the fridge! 😊
First, you're welcome. I, too, love dill pickles! One of my favorite things. I haven't gotten into the jars that I put in my pantry, but have been eating the ones in the fridge. So good! Good for you for checking the seals! It's so important to check them before putting them into the pantry. And then, before opening them, I do the same thing, just in case. BTW, how did the beans you canned turn out?

It's approaching 100 degrees where I'm at for the next several days, and without A/C, the canning will have to wait until we drop back down into the 80s at least. But that's OK because I'm gathering ideas from videos like this and from my canning books. I'll have to check out the DIY Pickling book you're using.
I'm glad the beans turned out great! Whew, those temps sound brutal, without AC. It hit 110 here yesterday, but we do have AC. We keep it set at 80 in the summer, because electricity cost is so high here, our bill is astronomical if we set it at a lower temp. I had to stop with my sprouting and stuff like that because it's just too hot in the house right now. So I totally understand you taking a little break from canning. As a side note, let me say that if you haven't tried canning ground beef before, start small. Some love it, and others hate it. It does kind of have a "dog food" smell to it when you open the jar. I just canned some chili with ground beef, and it's delicious. I also did sloppy joes, also good. That makes me more confident to do those types of thing with ground beef. I think I will do spaghetti sauce with meat next.

Time still not sure how to preheat the water in my Nesco first. the valve on my Nesco seems kind of wobbly . My husband seems to think it’s not right. Sent my first one back this is the second one same thing. I hope it’s supposed to be a little wobbly.
Thanks for watching and commenting! The weight doesn't click into place or anything like you might think it should. However, you should be able to feel when it slips from exhaust to airtight. In the exhaust position, it will be raised up a bit. In the airtight position, it will drop down. Play with it a bit before actually canning, so you can get a feel for it. I think that will make you feel more comfortable when using it. Let me know if you have questions along the way.

So I have a question. hoping you can help me with bread and butter pickles.Do I make the brine for the bread and butter pickles and let it cool before adding it to the jars? There’s no recipe for bread and butter pickles for Nesco. Just not sure if I make the recipe over the stove or add everything in raw.
My apologies for the slow response, For some reason, your comment went into the spam folder here on YT. Just follow any other bread and butter pickle canning recipes. Typically, you will put the cucumbers in raw, and use hot brine. Use the WB setting on the Nesco, and can for the same amount of time as you would in any water bath canner.

I've seen that Carey book, and it apparently really has nothing to do with the Carey canner, and thus the bad reviews. I've considered writing a book on the Nesco, but am not sure since people focus so much on tested canning recipes, which I can't officially do. So if I wrote one, it would be more on operational tips, how to adapt recipes for the Nesco, etc. Having said that, you can use any canning recipe in the Nesco/Carey. The recipes and time to process, etc. is the same. The only problem you'll bump into is that sometimes canning recipes make more than can fit in the Nesco/Carey. So you either have to reduce the recipe or run two canner loads. One other thing to keep in mind is that the Nesco and Carey canners are the same, so get whichever one is cheapest at the time. As an example, right now the Nesco is $115.63 on Amazon (amzn.to/3Xgi6BA) and the Carey is $136.48 on Amazon (amzn.to/3yIVrom), so I would buy the Nesco. Other times the Carey is cheaper. So it's worth checking the price on both.

For a crispy dill pickle you should soak the fresh spears in quite a bit of pickling salt for an hour or two so that the salt can draw out the water. Drain that water off, rinse the spears really good and let them dry a bit then pack them into your jars. I love your videos by the way. I’m a new subscriber to your channel and I have been binge watching your videos all evening.
Sorry to hear that. :( Pickles are tough. I want to experiment with low temp pasteurization for pickles, but haven't tried it yet. It's not possible with the Nesco, unfortunately.

I bought mini cucumbers from Walmart and they are fermenting right now. They were so much greener than the ones I got at our local farmers market.

Do you think your pickles are more crisp from steam canning opposed to waterbath canning?
Great question, and unfortunately, no, they weren't. They are delicious, but not crisp. Next time I want to try low temp pasteurization.

Had to use low pressure to process due to jar size and the pickles are mushy. Such a disappointment 😢
